Nowadays, fast food restaurants use frozen fries out of a bag. In 1970, the restaurant that I worked at made their fries starting with whole potatoes. After they were de-skinned and sliced, they were blanched in hot oil in wire baskets for a few minutes. Then, the baskets were hung on rolling, stainless steel racks so that the fries could drain and cool. Covered in plastic wrap, they would stay good for quite awhile -- until they were needed for the final frying. It was a labor intensive process, but the fries were much better tasting than today's.

I pulled this recipe up last night to give it a try & I was thinking..🤔 ..first he says only make them if you have leftover oil from making donuts.. then he says.. "I don't expect you to do this" ... But I realized he was just BS'ing about the donut oil, and he was suggesting that cutting them by hand can be tough to get them even.. I guess if you have a mandolin or some sort of fry cutter, it may be easier? Welp, I cut mine by hand & it was a PIECE OF CAKE... Super EASY! I fried them in my presto frier out on my upper deck outside ( 29 degrees 🤣) b'cas I was also frying some fresh Alaska cod & I always fry seafood outside. The fries were SO SIMPLE to make & sooOOoo delicious! 😋

i have a fry cutter i got for like a dollar .50 cents at a cheap place. had it for a very long time now. at least 7 years and i cook fries at least twice a month

so i tried it, insteas of a knife i used a spoon to cut the tates. Then i had no oil, so i used butter. Also the potatos where moldy inside, thats why i used the peelings. I accidentally threw them away and was left with the fried butter. I seasoned with sugar and served. It looked almost as your picture, with a nice soft crunch.

Blanche them in water first ( like you were boiling Potatoes ) but take them out before they get soft or they'll break up/turn to mush. Then, after they have cooled, fry them first at a low temperature ( let them cool again ) and then finally at a high temperature to crisp them up!. Then you will have beautiful crispy chips! Great video by the way!

Wow, so much hate on this video...sheesh. If you guys spent as much time watching his videos as you did arguing about this one you would realize that he is being humorous. Most people don't have a big dutch oven full of hot oil (he does because he used that to make donuts previously) and there are easier ways to get decent French Fries. And it is sad how many people and places don't know this simple method of getting home-cut potatoes to actually crisp. Nothing sadder than getting served a side of soggy, limp fries. Rock on Chef John!

I boil them first, just for five minutes, then place them in the fridge, so the next day they are ready to be fried in hot oil.

Ketchup & mustard, for me. Heinz, of course, and the classic American bright yellow mustard. Heinz is an excellent choice there, too. About 2:1. Swirled, not mixed. I know, I'm a bit on the fringe. Savory, acidic, umami, that's my pallet. Not that I've given this much thought.

So I don't actually have a thermometer to measure how hot the oil is, but I tried this anyways and just eye balled it with the bubbles. Turned out better than any fries I've ever bought. Absolutely delicious. Twice frying thing is genius.

+SaintRS I would say it's a legal "protect my butt" thing. Anything related to deep frying could really back fire (no pun intended) if you are not prepared, and let's face it... competent to do such type of cooking. Personalty, I use a three stage cooking that would probable beat that method, hands down for crispiness and nice soft middle. No hard feelings... Mine are better! ;)

Hi, what's your take on boiling water blanching, instead of fry blanching? I do this myself, & love the results better than any fry I've had. I use russet. I find it faster & less hazardous. Cut potato,soak,put in boiling water,bring to boil again, boil 7-8min.Drain,rest in colandar 5 min to evaporate excess moisture(no water to spatter in oil). Then fry immediately in oil as hot as possible. The surface should blister, then turn golden brown. Love it! As a chef, what's your take on it?

you can prevent this browning by blanching them in vinegar and water instead of oil as he has done. The actual taste of the fries is not very much affected. But most commercial fries and chips are treated in some way to lessen browning which is why a homecooked fry will look overdone.

@goathead111 It's definitely no sin to eat a fish or two in the streets of Holland. Herring is eaten raw (but cleaned!) with diced onions to go with it. I like the taste of it, but don't like the "take it by the tail and bend your head backwards-way" to eat it. I'd rather cut mine up. It feels more natural. These fish stalls are usually to be found once a week, as they travel from place to place within the week. They also sell kibbeling (pieces of battered, fried fish. What a treat!

you can also blanch in water then dry, then fry, it works the same and then you don't have to do the soak thing, i have been doing this for years! you can also half bake them and that works too

@makeup908 Yeah. And what I like to do is drizzle a little bit of peanut oil on the pan before putting the fries on it and then drizzle some more on top. Not too much though, just a light drizzle. I typically try to make it really crispy by setting it at 400-500 degrees. They brown and get nice and crispy.
