Apple pie with cheese..an old Yorkshire combination. Also rich fruit cake( no icing nonsense) , mince pies with it too. Preferrably Wensleydale cheese( old recipe, not modern attempts) or a white stilton.

Well this is a happy coincidence because I didn't know what to make with the last two apples from my backyard tree. Made this a couple hours ago and it's really nice. Don't skimp on the puff pastry though. The cheap stuff is just no good. Added some cinnamon, freshly ground black pepper and a touch of nutmeg to the grated apples.

Thanks very much Chef John! I made a batch of these this morning and they taste awesome (I did wonder about the cheese and apple but remembered a plowman's lunch here containes those two ingredients too) just some leftovers stuff and some chillies laying about so I might make a chilli and cheese twist version next!

Let's twist again, like we did last summer....😉 As for the celulose dust on cheese: I remember the ads, back in the 1970s, for "Grape Nuts" cereal, that featured Yule Gibbons, asking, "Did you ever eat a pine tree?" How oddly prophetic...

Any more, the only time I use a silpat is if I don't want browning on the bottom. Otherwise I use parchment paper.

Opportunity missed for a Chubby Checker reference upon twisting, and then missed a second time when you twisted them again! I will need to try this with some bacon bits mixed into the apple mixture...

@Chef John It's a good thing I recently heard that story of Oliver Twist otherwise I would not have gotten the point of you saying 'just say 'yes'' if your guests ask for more. :) Do you come up with that stuff on your own or do you get help with those lines?? Question..when did Cheddar cheese become what it is now..nothing to do with the cheese made in Cheddar, Simerset ..what is it actually , now? Grate it manually ..but still , is it anything in particular anymore? These things are important!!!

I'd advise next time throw in 1/2 to 1 tsp of black pepper in with the mix. I know, sounds weird but for some reason it makes the apple taste even better along with the cheese and salt.

Not weird at all. Have you tried plain yogurt (or Greek yogurt) with peaches in season, sprinkled with cinnamon and black pepper, drizzled with honey and topped with candied pecans? The black pepper gives it a nice zing that balances the sweetness.

The best Apple/ Cheese combination I know of is the Gala apple with Kerrygold Dubliner cheddar cheese. They're made for each other.

100% better warm, than letting them cool. Aside from that a really good recipe. I used a mix of Cheddar, Provolone with a small amount of cinnamon and nutmeg and some Parmesan for the top.

Honeycrisp apples are very good for cooking. I use them in a sweet/hot sauce I make for pork chops.

lol, just made this with dafurs (sp?) pastry. The twists untwisted while baking and the sharp cheddar (Whole Foods brand) melted all over in an oily goo. I did line my baking sheet with parchment paper. Tastes great, but does not look anything like Chef John’s.

Hi Chef John! You say grate your own cheese as pre grated cheese is covered with cellulose. What about frozen grated cheese like “cracker Jack “ (we don’t get that here in the 🇬🇧, I don’t know if Cracker Jack refers to the cheese or the brand that sells the cheese) anyhows, can we use frozen grated cheese? And blue cheese, would that work?

There used to be a place near me that made something similar, swap the cheese for slightly more apple and adding nutmeg to it. Then dusting the entire thing in cinnamon sugar before putting it in the oven.
