I’d suggest a grater instead of a knife. The older I get the less my body does what I tell it to do. It’s too often I say I’ll be careful but my body does the opposite.

Bread crumb/binder should always go in last, after you mix in all your wet ingredients with the meat. The wet is to keep meat moist & juicy, well seasoned - the bread crumbs or whatever just to bind it all. Think about it - if you just dump it on top, the bread crumbs will just absorb most of the wet before it gets to coat the meat.

At the fire house we use to use a cheat of a jar of Pace picante and a diced mango. Use with grilled /broiled salmon and guacamole .

What is labelled as cooking wine has salt added to it. It's definitely not something you would choose to drink, and even the cheapest wine is a much better choice. I hope that helps.

Yellow vs white. Clearly the white is sweeter, which I prefer. But my mom, born in 31’, god rest her soul, loved yellow and hated white , not sure why. She loved creamed corn which I would make for her often. One day while visiting, I made white creamed corn for her but added a drop or so of yellow food coloring. Cooked it as normal and asked her, hey mom, how is the creamed corn? She loved it. Told her it was white. Of course she didn’t believe it. It’s amazing how old memories screw up our tastes

None of the great fish eating groups from India cannot make a good Curried Samon of the Northern hemisphere. My daughter a great cook in London Hates Atlantic Salmo. Whereas the Southern hemisphere( Australia) gets Pacific Atrippus ..so we Indians can at last enjoy our salmon. Leave Salmo....Nova Scotia,Maine,Norwegian to the northern snow white onescalled cooks or pescatarians.

Hate,HATE Atlantic(US) Salmon Pacific Salmon (Australia) is the Best...BEST. There must be something unbearable about Atllantic (,US,UK) salmon so it needs to be smothered in jazzy sauces and extras ( loads of unctuous butter...French is best) Atlantic red tastes and smells poisonous. Pacific Salmon a different species altogether,love it

Chef, please do a video devoted to the salmon skin! Crunchy salmon skin, and salmon bacon, etc are even better than similar chicken skin events, imho. Grilled, smoked, cured, fried, sauteed, broiled, baked, twice-cooked. Anything. And I am a total amateur. Please help.

Here's a hot take: the best salmon recipe is to poach it in a creamy butter sauce, for 20 minutes in an oven. The salmon comes out super flakey, all of the internal moisture is preserved since it is being covered by a thick creamy sauce and it just melts in your mouth. No frying, no curing needed.
