BTW, God bless you no matter how you like your meat cooked! If you like well, cook meat well, it doesn't bother me in the least. BUT what I am saying, is if you pay $75 for a beef tenderloin, and cook it past 125 (which will rise to almost 130 as it rests), then IMO you are wasting your money on this specific cut! It's just too lean to cook more than this.

Food Wishes To each their own, chef. Love your videos, love your presentation, use your recipes with great success, but.... I’m not into blood. Don’t like the taste. Never have. Seems metallic in my mouth. And yes, I’m also a little sissy wimp who can’t live up to the standard of you big strong men. So sue me. Why can’t people just let other people enjoy their food? Huh? Would it be so difficult? Let’s give it a try this month. Wadda you say? Just one month. Next month we can all go back to being disrespectful.

I told my mom about the success with the beef roast and she tried it on a pork tenderloin and holy moly!!! That was the best bit of pork I have ever had!!! She cooked it to 145F and it came out perfect!!! Juicy, tender, and so full of flavor, despite forgetting to season it!!! Dude, you rock!!!

dude..if it is pork, cook it very well..you could get parasites from eating undercooked pork..unless you very sure the pigs were raised under meticulous sanitary conditions..i won't bet on that tho

N I G G A did you just admit to having pork medium rare? on the serious side tho, smoke the tenderloin for a couple of days nex time, its way safer that way. plus you get the smokey aroma and the fat is a lot more edible

Thank you, I followed your temperatures and it turned out perfectly! Mine was significantly smaller, it got to 125 in 20 minutes. Just a heads up for anyone else in case theirs is smaller. I have a thermometer that beeps like crazy when it hits the temp so I got it in time.

I've made this a few times and it's so good. The tarragon makes the dish. I used the dried mushroom mix from Costco both times and dried tarragon before I put it in the over. Clean plate club for Christmas day! Thank you, Chef John for sharing your gifts, talent and passion with us schlubs!

I have made this recipe exactly as videoed probably 10 times over the years. Always perfect and absolutely delicious every time...has become to go to for company dinner as it gives plenty of time for socializing during prep. You are very good at what you do - thank you.

Wow that looked amazing, I loooooove a rare roast, or any cut of beef rare, It's just a shame that I live with people that think a steak or roast should be so well done, that its like rubber.

+Brian Haack same, my beef/rib eye, porterhouse, T-Bone or tenderloin has to be medium rare. Otherwise I will send it back to the kitchen or give it to my German Shepard.

rare red meat is so bad. it isn't cooked long enough in this video. yes you may like to have soft juicy meat in your mouth but it is full of bacteria . rare meat is bad for intestine and causes e coli bacteria.

Bacteria dies at a temperature, not a color. If you can find me an E-coli strain that survives at 125 degrees Fahrenheit, you will have created a new precedent. Don't be a fool.

IF you panfry a T-Bone or porterhouse in a cast iron skillet or broil correctly it will taste delicious! I know someone who is a CHEF in a major hotel restaurant he can bake/broil or pan fry hamburger that will taste like filet mignon.

I made a chateaubriand for New Years using this method. It was the best thing I have made so far. My husband was in heaven. I served it with steamed buttered green beans a mushroom couscous and a beautiful red. Thank you Chef John! LOL my husband thanks you too!

I made this tonight and it was sooo delicious. I used a 6 lb tenderloin which was probably 5 pounds after trimming. Literally tasted like France. And was way easy. Thank you for bringing this divine dish to my house! I’ll be making this often.

I'm with you I don't like it still breathing ... lol I just dont like the blood and it looks raw. The bible says not to eat blood. I bet 20 min to a 1/2 hour more. Just check it after 10- 15 mins. I like it with horse raddish. I am making this for Christmas, the waiters hate me when I ask for med well prime rib too, it's just too darn bad ... Cuz you know I am the Myrna Loy -n to my tender loin. That is harder than you think. Cook it the way you like it. Merry Christmas!🌲👍 Or to him I'm the Desdemo i na to my tender loina.

perfectly, this is almost exactly how I do mine sometimes, dont overcook, 125 max Have nice glass of red wine around too Do almost same recipe with rack of venison and red wine sauce, beautiful

After watching dozens of videos, I chose this recipe for my 1st ever ($200+ CHRISTMAS) tenderloin. Wow! Best tenderloin we've ever eaten. Skipped the teragon...not a personal fav. Still rocked.

In my opinion, the only meats that should be eaten well done is chicken or pork; you can catch diseases from these meats if not prepared well done. Beef should not be anything above Medium, in my opinion, because so much of the flavors and juiciness is lost. Beef cooked to well done will be leathery, no matter how well you cook it.

Doesn't even have to be properly cooked, the only part that needs cooking is the outside. Otherwise, you can basically eat it raw. Good quality meat.

John......this recipe looks very easy to do. I bought a whole tenderloin (6lbs) and I trimmed it up the way that you showed, very easy to do. I cut the tenderloin in half for two 3lb roast. The whole tenderloin cost me $54, but, each roast will be for two meals and two people so the cost per meal is just $13.50 or $6.75 per person, cheap meal for my wife and I. By the way, I also do a prime rib now your way, also very easy to do.

Cooked perfectly, for those saying it's raw, it's not, that's how cooked "rare" is supposed to look like... I myself would of let it in the oven for another 5-7 min for med-rare

Just an alternate method: After the roasting, place the roast in a casserole, throw a couple of bayleaves and an extra chunk of butter into the pan, and deglaze the pan with 250ml beer! Pour the deglazed beerjuice (what a name by the way) over the roast, make sure that there's a couple of millimeters of liquid on the bottom (if not, pour more beer!), sprinkle with extra salt and pepper, cover it with aluminum foil (avoides further browning) and continue as normal.

Hah, my dad just make a roast beef tonight :) it was nice. Yummy gravy and potatoes too. He's a chef like you (mostly GM now)! In the business 30+ years. We get good food
