Hi Maitreyee, Good to see you trying jackfruit... In our families, both my parents' as well in my in laws, the first few times the jackfruit is made in a season, it is always veg, meaning without onion garlic...Simple Jeera, tejpatta, sabut garam masala, adrak, and haldi , lal mirch, jeera powder thing...finished off with ghee garam masala...and the end of the seasons one is non veg....in my psrents ' house it is without shrimps, made like we make pnathaar maangsho , justifying the name gaachh pnatha, while at my in laws place it is with shrimps...and yes you are correct outside Kolkata it never tastes the same.
