Chicken of the Woods (Polyporus sulphureus complex) includes several species - the one featured here is Laetiporus conifericola.
These brightly colored mushrooms are some of the easiest to identify, and grows in prodigious clusters, sometimes weighing in at more than 100 lbs.
In the Pacific Northwest of North America, the most common Chicken of the Woods, also known as the Sulphur Polypore (Laetiporus conifericola), is a brown rot mushroom that grows on conifers, primarily hemlocks and Douglas firs, although we recently found some growing on a very decomposed cedar. Another clade of these species - Laetiporus sulphureus and Laetiporus cinnatus, grows on hardwoods. Typically growing in early summer to early fall, these species can reoccur for a few years. Some mycologists describe this species as a weak parasite, which then grows saprophytically after the tree dies.
These species are so efficient at decomposition, they can eat a standing tree or log in a few years, colonizing the heartwood, leaving only brown, cubic like blocks of lignin, as its cellulase enzymes digest the cellulose.
I love surprising my friends with this mushroom who can’t believe its flavor. This mushroom tastes like chicken!
Here, I show you a simple way of preparation. It is important that they are well cooked. I prefer the barbecue, cutting them into strips and to singe the edges until they are crispy. Great finger-foods, these can be frozen, post cooking, and then re-heated. This is one of the few mushrooms that can be harvested in large quantities. And its bright sulphur color makes it easy to see from afar.
Be forewarned that Chicken of the Woods can rot quickly and if eager mycophiles do not cut away the blemishing regions, they can cause GI (gastrointestinal) discordance, i.e. a stomachache. So please be careful - and note that the edges are the most delicious.

My grandmother had a tree that would produce these mushrooms like crazy. We sold them to a local chef who made stew with them.

2nd this. I always feel like I find the edible mushrooms, but they don't know the best way to harvest and eat. Also, hearing you comment on what to look for that's good vs. what to look for that's bad is very helpful.

I grew up living in a House in the middle of the Woods, no electric, no running water, wood burning stove, had to get our water out of the pump well, washed in a large basin and an outhouse, we grew our own vegetables and bartered for meat. We had 12 acres of land, now I live in this cess pool of a city! I miss living with nature.

I had some over Labor Day weekend. I didn't think they "tasted" anything like chicken, but the texture was almost EXACTLY like Chicken. Super delicious if seasoned just right.

Around here in Michigan, one can literally drive around in a wooded area, and spot these tasty mushrooms from quite a distance. When I spot one, I've been known to go to the land owners door to ask if I could harvest them. If nobody answers...... Snip snip, they're gone! Lol!

I was on business travel in California two years ago and found a nice specimen of this kind. I instantly was captivated by mushrooms and foraging. I brought it home and cooked it in a stew. AMAZING.

Pouring it on a gas grill is an excellent way to clog up the fire jets. I'd have to get out my cast iron equipment and build a camp fire and cook.

Well, to put it into a nutshell, I'm a farmer and a hobbyist mushroom grower/hunter. Before I read "growing gourmet and medicinal mushrooms" I had no idea I could cultivate most of my own mushrooms with relatively little work and time and effort. I also started several mushroom beds around my farm. Had I never heard of Paul I would have missed out money and deliciousness. I highly recommend the aforementioned book. Hope this helps ya'll

I cooked them three ways...double egg wash and flour and fried in oil were best and also fire roasted a bunch...they soak up oil like crazy! Took leftover and crock potted into a marinara sauce. Yummy! Paul has been my number one mentor for over a decade...i love you man! Wish you were polyporeamorous! Wish you would do a trip to northern New England and hunt some of our local species and videotape...please?

I never cut the entire “leaf”. I only trim the first inch off and use that to cook with. By leaving the rest of the mushroom on the tree it will often regrow what has been cut off. At which point I go back a repeat the process.

you can cut off at the stem and it will regrow in 3-4 weeks. It takes a bit longer but hey works both ways.

1000 commentator is actually eating freshly foraged Chicken of the woods from off the Deleware River Basin early October 2021. I did a saute with soy , mirin, and chix stock. The rest will be dried & made into a powder concentrate for adding to grilled meats, soups, & stews. Thank you Dr. so much for sharing your passion , knowledge, & expertise with the common man.

I successfully recognized this one from one of your videos on one of my hikes in New York. Big flush near the roots of a tree. I ate some fresh ones on the spot.

Great recipe. I dehydrated some and added to soup stock. I also like them with venison and onoins. I once found a flush that probably was one hundred pounds ! It looked like a tree was on fire. It was before I ate chicken of the woods unfortunately. I did photograph it.

Amazing work Paul, looks tasty, I grew un in Latvia and we do a lot of foraging and mushroom picking. In Latvian there is a saying - Go pick mushrooms, when you want someone to pootr off. Wish I could take Paul with me around the forests of Eastern Europe see what he thinks.

I find them on my property here in Michigan. I'm a transplant and when first pointed out to me I thought the guy was BS ing me. Did some research and sure enough they are good eating and I learned a bit more from this vid. We sautéed them but the BBQ sounds great.

Bought your books 20yrs ago and they have been invaluable in my property management plan by utilizing what the woods gives us for growing platforms and ultimately faster regeneration for sustainable harvesting timber. Glad your channel popped up in my feed!

Just found a gorgeous flush of these darlings on a cherry in Vermont my first harvest was 30 lbs off the fallen trunk and two weeks later another 15 lbs from the stump!

@@DukeOfEarle88 no those are just base sprouts from all the giants that have been cut down there. Ie. arround 200 years old. There are a few big ones left. But they pale in comparisons to what you can see in pictures of fellings in the 1800's. I mean three or more railtracts wide transports of trunk chunks. Some trees said to be over 200 meters tall

I would suggest to Mr. Stamets, @ 3:20 Try one of those [ If I have the name right ], A " Fish Basket " ! They have a handle and Grates on both sides, they open like a " Book " and from there you put the Fish ( in this case The Shrooms ) Inside and you can flip them when one side is done and cook the other !

@@b4lmember651 lovely experience as always, a beautiful location, with gorgeous lights n decorations. For an hour it felt like a d.m.t trip, where I was aware of other dimensional beings all around us observing, it seems they were pleased with our transition of conciousness...everything was very much peaceful

I just recently moved and discovered a giant red oak in the woods behind my house and there was a baby COTW on it and I got to watch it grow and then eat it. But by the time I picked it it was full of bugs and I could only selvage a small amount so yeah the window of opportunity is small. It was delicious though 😋

Yeah they turn quick. Paul just took the outer edge. If your harvesting the whole flush you'll want to blanch them in cold salt water. Those little buggers will be up in the nooks and crannys.

Found one in Missouri earlier this year! First time trying it... Absolutely DELICIOUS!!! The chicken 🐔 is now my favorite mushroom 🍄 except for lions mane maybe which really does taste like crab 🦀 meat!!! 🤤
