you have slice the amplaya first , mash or squeeze with 1/2 tsp of salt . I do 2x so the betterness will go away

We never squeeze ampalaya, nutrients may wash off.. instead, cut it in a thin shape like a chips and don't over cook for better taste..😊😊

Anything Carol cooks, I will eat. I love the way she pronounces "kalabasa" like a native. Someone made a comment about Carol not using salt. You don't need salt because they already have "patis", a salty fish sauce.

separate the squash seeds, clean with water, dry and toast them, healthy and yummy to snack on. no waste also for easier handling of the ampalaya, cut them in half first lengthwise, scoop the insides with a spoon then cut. to lessen the bitterness dont stir it too much and soak it beforehand in salted water

We usually discard the center of the squash. The rest of yourr squash in your ref you can stew with tiny shrimps or 1 tbsp shrimp paste, with coconut milk, just a little to cover it, about 1 cup.

I love Pinakbet! Tip to reduce Ampalaya's bitterness is you have to sprinkle it with salt for a minute or so and rinse it with water. You guys are great!

Ampalaya has so much nutritional benefits. It takes a while to get used to the taste. I grew up not liking it but now it's one of my favorite.

also I find that if you cook it down a bit (until it’s soft) more, it tends to take the bitterness away. be careful how much fish sauce you put, because it’s really salty...you guys should also try “mungo” beans, I have mine with spinach no meat 👍🏽 super yummy, taste like lentil soup😊

Pudekz51790 that’s true to, depends on your tastebuds, when I was younger I couldn’t take the bitterness but I found out that it has a lot of health benefits, so just recently started cooking with it but only when making pinakbet, My son is starting to like it as well. Filipinos also eat the leaves, mostly the young shoots, used in salads (blanched) or cooked in soups

Yes,the remaining squash they can make one of my fave...Squash and String beans with coconut milk..we always do it slightly fry first then the 2nd squeezed coconut milk..bring to boil then the pure coconut milk..humm. and anchovies..to top😉

so that you don't have that much of a difficult time making your own coconut milk, you can buy the powdered mix in a pack. i use it, and it tastes exactly the same.

yes you can do ginataang kalabasa or you can fry it (okoy) grate kalabasa, mix it with egg, flour, tofu (tokwa) , onion and a little shrimp and fry . you can have a dipping sauce of vinegar mix with garlic , little sugar and onions. :)

Ampalaya is so under rated. It's so good especially that calabasa makes it go over the top. Try ensalada cucumber, easy n goes good with any meat. Talong(eggplant) torta . Kang Kong. Miswa. Ukoy. Garlic fried rice with fried tofu.

Add coconut milk. It'll taste so good. To remove the biterness of ampalaya, you may sprinkle some salt on it first before cooking and let it sit for atleast 30 mins. My favorite vegetable is ampalaya and it's wierd.

To make pinakbet we add bagoong which is made of shrimp fry and quite salty and gives more flavor. Bittermelon or ampalaya is good for diabetics. Lowers blood sugar. Looks so appetizing. Great job. To remove bitterness in ampalaya you soak it in salt and water.

Very good that your kalabasa and tokwa pronunciation is sounding good like any Filipino. The bitter taste of your bitter melon ingredient, must be developed and have an acquired love for it's taste for being a great health food. The bitter melon has Vitamin C, A , E, B-1, B-2, B-3, B-9, Beta-Carotene Calcium, Iron, Folate, Potassium, Zinc lowers blood sugar like a natural insulin, anti-inflammatory, and cancer fighting properties among other health benefits. I'm glad that you both have decided to enjoy this healthy vegetarian dish often!

It's cute how they cut Ampalaya. Soak the Ampalaya with salt water after cutting it, the bitterness will be minimal.

The fish sauce mentioned in the ingredients pertains to Bagoong. Fermented fish sauce. The fish sauce you used is Patis. Kinda confusing for foreigners but you'll learn along the way.. Bagoong is what's used for Pinakbet. It is not pinakbet without bagoong. What you cooked is Bulanglang = Boiled veggies.😅

The technique of ampalaya is, put 4tables spoon of salt to ampalaya and mix it add 2cup of water, let them soak 15mins and wash again the bitterness will disappear 80% Thats im doing bcoz iam a Filipino

With all due respect, ampalaya is a highly nutritious vegetable because of its bitterness. If you do it the way you say it, and it hurts and it's a big insult when you say you're doing it "bcoz iam a Filipino", pleaaase!, you take off the nutrients. I tell you if I do what you say, I'll be the dumbest person on earth. I cook ampalaya and eat ampalaya without getting rid of the bitterness of it. Some Filipinos should be educated in nutrition. Why waste money, time and effort and then throw away the nutrients. Not all Filipinos cook and eat the way you do with ampalaya.

I love watching you cooking Filipino food. You can make an ampalaya salad too. Wash it first before you cut, & then soak it in water with salt. Let it set for 5 or more minutes. Drain it & put thin slice tomatoes & red onions &put a little bit of fish sauce. Dont forget if you drain the ampalaya wash it again to take out the salt. Try this salad with fried fish. Enjoy??

Oh guyz, it makes my mouth water. I love Penakbet so much coz it is loaded with so much nutrients. Ampalaya alone is reach in iron& good for diabetes too. Kalabasa rich in vitamin A, Okra & eggplant are high in anti oxidants, string beans a vege protein, & etc. Me, I modified it by adding Oysters Sauce. But you can make it all natural without adding food enhancers. Bon appetite! Ummm yummy!

I am American my wife Filipina. She has adapted many traditional recipes to no meat. We like vegetables we understand the health factor and it taste so good so yes many or most recipes can go vegetarian and taste great. Sometimes she ads just a small amount of meat for flavor and texture. Love your vids.

My 82-year old grandmother is now asking how Chris and Carol are doing. I just told her you don't have a new upload yet. We're also in a lockdown here in the Philippines and we've just stumbled upon your videos and we could not count now how many we have watched. :-D Seriously, Chris and Carol, you've changed the way I see KZbin videos. I don't remember commenting like this before. But now I've realized that it's possible to be thinking of someone you've not met. I guess that's how you've made an impact in our lives in a simple way because of your authenticity. My 82-year old grandma was even telling me the other day, "Chris looks like a very good man. He's gentle when he speaks. He looks kind." Then to Carol, "She's a beautiful woman." Then she was wondering if your parents were worried about you. Then, even when you were eating the "bangus" she's shocked you're putting them directly to your mouth without removing the tiny fish bones. We're somehow worried they'll get stuck in your throat. ;) because in our family, we don't eat it that way. In the market, we ask the fish seller to make it boneless bangus. Some will be ok to do that service for you of removing the tiny bones because they have the tools. Hope you're okay there, Chris and Carol. God bless you both. I didn’t like ampalaya/bitter melon but I grew to love it. You might say it is an acquired taste. Very healthy and rich in antioxidants.

Ampalaya/bitter melon is one of the most beneficial veggie you can eat. Its medicinal/herbal/vitamin qualities is endless. Keep eating it and never mind the bitterness in time you will learn to like it. I love the way the Chinese stir fry it. Enjoy!
