Epic means "heroic or grand in scale or character." It is not heroic nor of good character to create meals by abusing animals needlessly. He applies cooking methods well but he does not show heroism or good character here as he cooks part of a dead cow rather than creating a vegan meal instead.

This is the most honest Asian home cooking I’ve seen on a western (white) channel. It’s Chinese but this type of food and preparation is the same for countries like Thailand, Vietnam, Malaysia, and Japan. You’ll never see these dishes in a restaurant, but definitely at an Asian family’s home.

it get baked into you, that habit. people dont realised that the moment you step into a kitchen, be just as an apprentice or go to a culinary school, the first thing they teaches you aren't how to cook/bake. My first lesson in culinary school was being taught how to clean. Then it weirdly goes 2 ways from here, most cooks either develop a habit outside of kitchen as well and want to be neat and tidy and organised in everything or be the type thats terribly messy and dirty but only strangely neat and clean in the kitchen.

The amount of oil used in virtually all Chinese food, including these dishes, is not healthy at all. Chinese life expectancy is very poor especially where people eat more restaurant food, as well.

@@bigppman6991 oil isn't bad for you. There have been plenty of studies that are high oil Mediterranean diet for example, even if it's higher in calories, is not bad compared to even a lower calorie diet. The key is grains. Grains are bad for you, especially how it's normally eaten in excess

I really love this, practical and efficient home cooking. Being the child of Asian (south Asian in my case) immigrants where making limited utensils work for every application is just a necessity, it doesn't strike you as remarkable until you move away from home. It is a great skill and it is cool that a pro chef is showcasing it. Also love that Lucas is everywhere now, he is really engaging and honestly a breath of fresh air. No nonsense and really knows his stuff.

@@yeungscs worth every penny. switched from cast iron to stainless steel, never looking back. everything tastes fresh like the food. no leaching from other foods. My cast iron was gunky to the point I didnt even wanna cook at home anymore. got rid of all my cookware and invested in stainless steel from made in. Also got the bluecarbon frying pans. they are great for high heat cooking! these pans also clean easily you just need to learn how to cook with them.

Great concept and all... I can see this working when cooking a meal for 1-2 people, but I often need to cook for 4-5 people or more and a 10 inch pan just really isn't enough to get the job done. But I suppose the same concept would apply to whatever size pan you need. If I use a 14in pan, then pair it with a 14in lid and pot

I can't do without my 8 and 12 inch pans. Granted I use them less than the 10 but for making things like a single egg nothing replaces my 8. For things like bacon and pancakes I rely on my 12. They stack so the foot print is no different that a 12. The big space waster in my kitchen is tradition material plus cast iron. I sous vide alot so I won't give up my cast iron for searing.

I like that he shows you can make anything with 10 inch cookware. America’s Test Kitchen said most pots and pans sets don’t have what they consider ‘full sized pans’, which they consider to be a 12 inch skillet, 4 quart pot(saucepan? lol), and a 8-12 quart stock pot.

Honestly, one of the main reason that deter people from cooking is the clean up. My mom has always been able to cook multiple dishes with just one pan and/or with a pot as well. When I will be seeing my American friends here washing 3 different sizes of pan, 5 forks, 6 spoons, 2 pots, multiple knifes, 3 bowls, 2-3 plates. All just to cook 1-2 dish for her boyfriend

Am i missing something? Anyone can always use a 'universal lid' so anyone could use a 6inch pan and a 12 inch pan with the very same lid! Big deal! What this guy is doing is NOT emphasizeing his "easy flow" techniques. Things are pre-chopped, blanched, washed, etc. And he knows exactly what he wants to do and how he is going to do it. He is NOT dithering. And he is cooking things that are somewhat similar to cook, at least time wise. No slow cooking with steamed peas as a side dish. No carmelizing proteins, no long stewing to melt connective tissue, (like chicken legs/thighs), etc. That is his real secret! Not the 2 pots, 1 lid technique. He is super well organized, prepared and he cleans as he goes!!! No doubt he has spend a lot of time in a chinese restaurant kitchen. Not to diminish his skills in the slightest!!! But he is very successful and clever! And it is has nothing to do with the fact he is using two pots and one lid! That should be obvious to everyone! But still, good job, chef!!!

I agree that you don't need many different sizes of pans/pots, but you can't do nearly as much shit without the steaming rack, a separate dish for the meat being steamed, a sieve a big bowl for ice water, etc. You basically end up with just as many dishes, but less changing pots/pans during cooking. Makes cooking more efficient, doesn't change this dishwork.

You’re not wrong, but strategy is easily a third of the challenge of cooking quickly. After a certain amount of practice, a home cook can handle pretty much anything they set their mind to if given enough time. The hard part is getting the process done fast enough. Additionally, he really seemed to be emphasizing creativity and making the most out of what tools you have at home.

@@PrettyH8Mach1n3 At the risk of sounding like “that guy,” or an elitist, a mental recipe bank isn’t the mark of a good cook, and you shouldn’t feel like you’re somehow a bad cook simply because you can’t cook 100 different dishes based on memory. Based on my experience, most cooks and chefs keep ideas and recipes written down somewhere; save for the dishes they’ve been making for years. There’s only so many times you can make a turkey sandwich before deciding “f*ck it, I’m trying shaved ham.” Start by combining things you like from separate recipes and you’ll probably surprise yourself with how good you are when you get something that clicks.

Were doing the nomad thing right now but since we are traveling by car we can carry a bit more to each air BNB. We have got along well cooking for 2 using our own 10" pan, wooden spatula, and a (actually sharp) paring knife. I would highly recommend if you want to enjoy cooking some of the local meat and veggies.
