I am totally with you on the garlic. I've tried some of the "easy" peeling ideas and they don't all work, and you still end up with sticky fingers from the garlic. Dyslexia runs in my family so I can appreciate how hard it is to work around. My dad has it bad enough he never really learned to read so we grew up reading for him and listening to his audio books as he worked. The funny thing is that as we all grew older we also found out that ADHD runs in our family and they often run hand in hand.

Yep me again! I love pizza too and it ain’t hard to make your own dough. Part of my cooking kit is a small digital scale for accuracy. They are light, cost nothing and the battery lasts for weeks. For two 10” pizzas, 300g plain flour, 3g instant yeast, 5g salt, 210 mills water (70% hydration), mix and knead until smooth and elastic (takes 12 minutes!), cover in an lightly oiled freezer bag and let it double over night. Job done. My camp fire is organized as follows. The main fire sits in the hearth being fed with logs providing light and heat and when I want to cook something I rake glowing embers across to the side for grilling, spit roasting, or pot roasting in the Dutch oven. It’s easy to control the heat that way. Works a treat. I also have a wooden pot hanger set up for boiling water etc. With your set up, I think I would have heated up the Dutch oven beside the fire and put the pizza on the baking paper and onto the upside down lid! Then lower the upturned Dutch oven down on to it. Let’s say the temp inside the oven was 250c to 300c your pizza would be cooked in less than five minutes. Lift the the oven off and there is your pizza ready to go. Easy! My long term camp also has a clay oven which I built a few years ago out of rocks, wood, sand, clay and straw. It takes about an hour to get hot for pizza and as it cools down, I can bake bread, pies, bean stews etc etc Great for smoking too. When it’s really cold, I use the clay oven as a refrigerator too. It is really thick and solid and the wood door keeps mice or martins etc out. Home from home

With regard to heating and cooking in your Dutch oven... more heat on top than on the bottom is better for baking. Setting the pot in the coals makes it harder to control the heat. Pull coals out with your shovel and put a layer underneath the pot, twice as much on top. With charcoal, I double the diameter of the pot to get the total number of briquettes needed, 1/3 on bottom, 2/3 on top.
