A little bit of ginger helps wake up the flavor, and a freshly squeezed orange, instead of water. It adds on to the flavor, and helps preserve it as well.

Thanks so much for sharing this great recipe, which is very versatile and adaptable to practically anyone's cooking style or taste. I'm on a salt restricted diet, so I omit the salt and store my green seasoning in the freezer. I pour the freshly made mixture into ice trays and freeze. Once frozen, I place the seasoning ice cubes in ziplock plastic freezer bags and conveniently use them as needed, in whatever amount of cubes I need depending on whatever I am cooking at the moment.

Hello Beautiful Island girl, I purchased a large glass storage container with a bamboo lid and noticed it’s kept my green seasoning fresher for a longer period of time. Week 2 is when I usually begin to notice a change in colour with plastic containers. However with the glass container, the seasoning retains its vibrant colours past 4 weeks! I don’t like to freeze my seasoning because I’m always in a rush and the thawing process requires time and pre-planning. I’ve been trying to incorporate more ital meals into my diet, sometime my mom or sister are on board and other times they’re not. Certain days I’ll use more of the seasoning than usual depending on what I’m cooking and who I’m cooking for. The glass container has been a lifesaver, I can use as much or as little and not worry about it going bad.

Hi Tiffany..do thawing a frozen green seasoning is soooo easy..just make sure you freeze it ib ice crates..so you get cubes..then when you want to use it, just pop in the microwave for apbout 90 secs, depending on the quantity and you are good to go..!!)

When i make mine it lasted 8 months in the refrigerator and smelt as fresh and more pungent than when I made it. I don't think I put onions in BUT I DID ADD LEMON I THINK, I HAD IT FOR SO LONG I CAN'T REMEMBER all the ingredients I used. IT WAS AS PUNGENT AND FRESH AS WHEN I FIRST MADE IT. I put mine in a glass bottle, no plastic.

Do you run a restaurant or have a big family? That’s a lot of green seasoning to use up in only a month. I freeze my extra and it last me for at least 7-10 months. I also haven’t seen anyone add dry seasonings so that is a good new tip for me. Thanks

Hi thank you for watching.. The dry ingredients are: adobo is the salt, turmeric, coriander, chilli pepper flakes, gram masala. I change my dry seasoning monthly also so use 4-6 that you like 1-2 tablespoon each.. just not to much salt.

If you have time, when u buy meat before you freeze it . Clean, season and then freeze. It will save you so much time after work. You just take out a pack in the morning let it defrost and it will be all ready to go, I season a month of meat at a time. Thank you.. you can reduce everything to make a smaller batch.. 2-3 different onions. Lots of garlic.. 2-3 different peppers and 2-3 green herbs and you have a smaller batch.. just get one of each.. except garlic.. this is a wonderful help to get the vitamins we need and kids will eat it.. thanks for watching.. You can use a little vinegar, but to much will totally change the flavor. You can do the onions and celery first which are very juicy and strain it and us that liquid with a little water as possible. But yes a little vinegar is fine also

I really loved this recipe. My husband is a black Trini and I am from Afghanistan. He says he loves afghan food specially my mom’s food among any other food that he tried from other countries but of course he grow up with the taste of Trini food and I know nothing about it. He orders from restaurants but he says it doesn’t have the taste he is expecting. After watching some videos I noticed Trinis use this mix for almost everything but among all the videos I really liked yours because of the extra information you gave which makes it easier for me to know and decide what to put in the green seasoning. I usually will.buy my chicken and fish and meats and clean them all, section our portion sizes and season with the green gold and freeze.. so when you ready u just take out a pack ready to cook.. meat will be even better as the seasoning soaks in down to the bone..😍

Yes, you can make a small batch. Try at least four different peppers any heat, two different onions, a handful of fresh garlic and add one herb, like parsley or celery or Cilantro. Or all three if your dear. But that will give u a small batch. Trust me they will love the freshness it adds to any dish. Would love to know how it comes out .

Hi thanks for watching. Garam masala, it's a blend of spices usually found where Indian foods are. If you can't find it. You can do with out it. Just as good. The fresh greens are an immune booster as well.. my family thank God never really gets sick. And I know all of this natural ingredients in our daily diet is a big part of it. You can also season your side dishes with it.. let me know how it comes out.. :-).

Hi thank you for watching... You can start this with your favorite protein. just place a spoonful or two in the meat, chicken or fish and then place in a hot pan with a little oil or bake. Add salt to taste . It makes a wonderful seasoned rice.. it can go in any cooked dish really.. beans, veggies just add some. You won't believe the flavors.

I hope to make a smaller batch this weekend to post.. however here is one... 3 different onions, red, yellow , white 4 green herbs at least - celery, parsley, green onions, rosemary, oregano, sage(not a whole pack as sage is very strong) dill, fennel, thyme 1 Pack of mini sweet bell peppers - three colors 4 hot peppers,- serrano, jalapeno, chilli, something else.. or double one of the above..... These peppers are very hot alone, however not in seasoning, just added huge flavor. 2 heads of garlic Dried seasoning, at least four different ones you like. If you use direct salt about a 1/2 table spoon to start then taste and add accordingly. This will give you a decent batch. But amazing benefits and in fridge will last four weeks.. you can bag some and freeze will last some . months and you take out as you need.. freeze individual batch so you only defrost what you need. Note. Never put a wet spoon in fridge batch or a spoon that touched the food you are cooking as it will cause the seasoning to ferment and spoil.. always a dry clean spoon.. also.. when blending some water and olive oil.. to get the blender going.. some people use a food processor which is fine.. but it will be chunky which is ok also.. what ever you like. @@Littlebitesofjoy still.working on the website.. sorry.. no you don't have to use the oil, the oil and salt is the natural preservative, it stops it from.fermenting.. so cut everything in half.. so it should last with just water for two weeks or so.. or you can put a couple tablespoon of vinegar.. that will work also.. to make it last..

Hi, the easy way is to season your rice water with it. Or you can sautee the seasoning in a little oil first, about a tea spoon oil and pot spoon seasoning.. cook that for a few minutes, add some beans and water for rice, taste season more and add rice.. it makes a yummy seasoned rice.. Hope that helps.

I did use shadow Benny, however forgot to mention it but u can see it there in the beginning also, that is a must :-).. so sorry to kill you about the steak knife, it's just my hands are small and when I am cutting up so much, I find I can move much faster..Do forgive me will do better next.time.. hope you like and subscribe. No matter how little cilantro is added to a dish, I can ALWAYS detect it. Needless to say cilantro is my least favorite herb

@@tiffanyg3584 Thanks Tiffany for your comments. May I encourage you to leave cilantro out of your green seasoning . My mom does not like it however, while licking her fingers when she visits, she never complains. Unfortunately I can't cook you a massive meal to try it one last time, so leave it out.. the seasoning is very good without it.. :-).. stay safe.

For sure... Omg your chicken will even be better. I clean and marinade my chicken, fish and meat then freeze until ready to use. It's the best. It really is a green fresh seasoning base,. So healthy. Try it.. I promise you, you will love it . Let me know how it comes out. so gooooood. :-)🥰

Thank you for watching.. you can preserve it in several ways.. get small freezer bags and section out and freeze it. Or In fridge for about a month it will stay good.. u can add about 1/2 apple cider vinegar and that will keep it to about 6-8 weeks . Never put a spoon that has touched anything in, not even water, dry spoon.. and lastest you can add more salt.. but I don't like that one as we all need to watch our salt intake... Hope this helps.

This video is brilliant I removed the cilantro, added pimento seeds & scotch bonnet peppers and used to it to help season curry goat. This was a life saver and was my best curry to date. I left Jamaica when I was two and food is a very important point of connection and bridge to my culture. I never knew we made green seasoning until watching this video and asking my mom about it. Thanks for the the video❤️ What Caribbean country are you from and what staple ingredients can be found in green seasoning from your country?

Ooo you made my day with your comment. I was born in Trinidad, but my parents are from Grenada and St. Vincent, I lived in the British Virgin islands for a long time.. I am a collector of culture and good food. This month my season was definitely Asian Jamaican.. I added Asian hot chili peppers and scotch bonnet peppers. I love big flavors so I love it all . @@tiffanyg3584 ooooso happy you love it.. everyone that has tried it feel the same way. Everytime u make it put your favorite peppers but try new ones. They change the flavor. My children use to think they don't eat veggies.. but with so much in that seasoning they were eating it all along. Do you know how to make the Jamaican coconut rice and peas?. Season the water with that, add a little sugar and Adobe.. omg best rice ever. I am glad you like it.. your boyfriend will be to happy as he will be eating well. Also if you have time clean and season your meat, portion it out and freeze for when you ready.. OMG the longer it sits on it.. even better.. thanks again for watching.. blessings.

Tomatoes would ferment and the seasoning would not last.. however, on the day you are cooking add tomatoes... It's a wonderful addition of flavor.

Thank you.. you can reduce everything to make a smaller batch.. 2-3 different onions. Lots of garlic.. 2-3 different peppers and 2-3 green herbs and you have a smaller batch.. just get one of each.. except garlic.. this is a wonderful help to get the vitamins we need and kids will eat it.. thanks for watching..
