🥩🥩This is how to properly make a beef wellington🥩🥩 Ingredients: • 1.5 to 2 lb beef tenderloin (center-cut) • Salt and pepper, to taste • 2 tbsp olive oil • 2 tbsp Dijon mustard • 8 oz cremini or button mushrooms, finely chopped • 1 medium shallot, finely chopped • 2 cloves garlic, minced • 4 slices prosciutto • 1 sheet puff pastry, thawed • 1 egg (for egg wash) • Fresh thyme (optional) Instructions: 1. Prepare the Beef Tenderloin: • Season the beef tenderloin generously with salt and pepper. • Heat a skillet with olive oil over high heat. Sear the beef on all sides until browned, about 2-3 minutes per side. Remove and let it cool. • Brush the seared tenderloin with Dijon mustard and set aside to rest. 2. Make the Mushroom Duxelles: • In the same pan, add finely chopped mushrooms, shallots, and garlic. Cook until all the moisture from the mushrooms evaporates, about 10-15 minutes. You want the mixture dry. • Season with salt, pepper, and thyme (optional), then let it cool. 3. Wrap with Prosciutto: • Lay out slices of prosciutto on a piece of plastic wrap, slightly overlapping. • Spread the mushroom duxelles evenly on the prosciutto. • Place the beef tenderloin on top and roll the prosciutto tightly around the beef using the plastic wrap. Twist the ends to secure and refrigerate for 15-20 minutes. 4. Wrap with Puff Pastry: • Preheat your oven to 400°F (200°C). • On a floured surface, roll out the puff pastry to about ¼ inch thickness. • Unwrap the beef from the plastic wrap and place it in the center of the pastry. • Fold the puff pastry over the beef, sealing the edges by pressing them together. • Trim any excess pastry and brush the entire Wellington with beaten egg. 5. Bake the Beef Wellington: • Place the wrapped beef on a baking sheet lined with parchment paper, seam side down. • Brush with more egg wash for a golden crust and use a knife to score the top for decoration (optional). • Bake for 25-30 minutes for medium-rare, or until the internal temperature reaches 125-130°F (52-54°C).
