If you really want to try to reconstitute it, weigh your item before and after freeze drying, and calculate the difference. Weigh the water, don't go by fluid ounces, and add back only the missing water volume and see if you're any closer to the original consistency. It will probably take more time and effort than other foods.

Ice cream is the best freeze dried - I made a batch of Costco's premium vanilla - it separated because they used too many fillers and thickeners - it was a bubbly mess - nothing like a simple Nestle ice cream sandwich which dried looking the same as it went in - I wrote to the company on their FB page to complain about it - their response was "why would you want t freeze dry ice cream? Ha ha ha Cheap ingredients to make it taste rich and thick - at a premium price.

If you bought a new freeze dryer, with the most recent software, you’ll need to go into “test mode” and turn freeze on for at least 8 hours before starting actual cycle when making freeze dried ice cream. The new software won’t allow you to customize freeze times. If you don’t, the ice cream puffs up and expands the moment the vacuum starts. I contacted Harvest right and also got an older version of the software. But, when making ice cream, i just cheat with test mode. Took 3 ruined batches and some research as to why, but definitely needs more freeze time than the unit provides in its normal cycle.

I don't usually mess with the shelf temp. I would make sure your ice cream is very cold before putting it in. I use the brick cartons of ice cream and slice them as opposed to scoops. I do not have the oilless. There are lots of people that have it and love it. I have the older pump and when it dies on me, i will decide if the oil less has proven it's extra cost.
