If you have a heating pad, put it on low and set the bowl of melted chocolate on the heating pad. It helps keep the chocolate liquidy while you are dipping your larger batches.

I wonder if putting the cheesecake filling in a large ziplock bag and then cutting off the corner, would allow you to squeeze the proper amount in each mold cavity. You could pick up the tray the mold sits on and bang it on the counter a couple times to settle it and get out the air bubbles.

For the coffee ones that you did first. I wonder if you melted the Cool Whip before putting it in the trays if that would prevent it from floating up once you add the coffee. I'm thinking it's the fact that the Cool Whip is whipped that it must have quite a bit of air within it, causing it to float up.

On this one I used the 18262 address label (picked up at walmart) On the fruit one I used the 1 inch clear circle but I didn't like them that much because it created too much waste and jamming in my printer.

According to HR you can. But I wouldn't for two reasons. 1 it will take longer to freeze dry and 2 the squares can be very delicate, if you remove after freeze drying the could crumble trying to get them out of the mold

How do you make peanut butter balls? Peanut butter doesn't freeze dry on its own but sometimes you can add it as an ingredient

So if you were going to sell these, would you shrink wrap the box? Would you put a desiccant or oxygen absorber inside? I’m ordering a XL freeze dryer soon to aid in my retirement funds and these would be great to sell but I want to make sure they stay fresh if they aren’t sold right away.

I stored mine in the refrigerator for several weeks in a sealed container. Really depending on the quality of your dipping chocolate and how well you cover the centers with chocolate is a great factor. You shouldn't have any problems for a few weeks similar to normal chocolate candy. It can start to blossom in the fridge but mine didn't after several weeks

Thank you. I was trying to solve that because chocolate if I understand correctly doesn’t have any water so I would assume that the choc would not rehydrate them. Please tell me if a could be wrong. And what if they aren’t refrigerated?

The chocolate does not affect the filling. In cool weather and good quality/tempered chocolate you shouldn't have a problem. The only problem is the melting chocolate in warm conditions. In my opinion.

I bet if you chilled your coffee mixture the whipped cream would stay stuck to the bottom.
