Over the last couple of years I have been freezing single meals. Being the mother of 5 I have always over cooked dinners just cause the kids always brought a friend home to eat. Now with them all grown and in there own places I still over cook. But that's OK cause now I put left overs into single plate containers. So each week on a Saturday and Sunday I will cook a big meal if the kids don't come over I just freeze them. So now I have 10 meals already too go. Needless to say my freezer is full. And if someone comes to visit I get to sit and relax and just pull something from freezer if they are hungry. Sending love, hugs and prayers..... Keep smiling sweetie xoxo

I was hardcore vegetarian. I would make grain breads, muffins. I loved making soups, rice portions. Take whatever I want and walk to university. Or my jobs. Loved those times.

I do most of the cooking in our home. I like cooking big batches so we have enough for a couple of meals and some more leftovers to go in the freezer for later. Means a lot less kitchen clean up!

I’ve been freezing a meal of whatever I make for supper. Often I make enough for a meal that day and then two freezer meals. One I keep and one goes to one of my adult kids. Last weekend I helped my daughter make lots of freezer meals to help her out.

I have a sealer and have never used it. I just keep forgetting that I have it.My kitchen has a small amount of counter and most things are stored on the back porch. That saying out of sight, out of mind is very true especially as we get older.

Half an hour invested today will free up hours for you to "play outside" very soon, Tessie! (But then you already knew that!) I've got the "spring-is-almost-here" bug myself, even though my ability to do much gardening is very much limited these days. I have invested in buying a bag of potting soil for my little container gardening project -- since one of my "helpers" threw out all my potting soil into the yard along with the old plants from last year... sigh. Apparently the notion that soil can be re-used from year to year was unfamiliar to this person. Ah well... it wasn't intentional. At least I don't think so... LOL! The chicken dinners do look delicious, and your prep time will be reduced to under five minutes now. That's a blessing. Also this is such a nutritious and low fat meal -- but one that's still full of flavor. Wishing you and Chevy Man a peaceful, restful evening! 💗

Awesome idea....I budget $350 for my once a month cooking, there is 5 adults. Most dinners there is enough for lunches the next day. I have one day (4 hours top). I do a lot of casseroles, crockpot meals in a bag and lay flat (only have the freezer attached to refrigerator. Also do breakfast meals, breads, smoothie bags and snacks. The only thing I do daily is the fresh items or opening canned sides. This is the only way we have been able to keep our food budget down.

Love the recipe, but I'd slice the chicken in half long ways and then in half during the middle to help stretch it a bit more. In my store we couldn't even find chicken breast and there is pretty much no chicken currently. Only had a bag of leg quarters so I'm going to cook and shred it and do this recipe. Then make bone broth.

I was one of those mom's in the 90's doing Once A Month cooking. 😂. At the time there was a lovely Christian women's magazine called Gentle Spirit. She shared once a month cooking that was very frugal. I enjoyed doing that. At that time I also made butter, ground wheat and made our bread, made soap and did lots on old-fashioned things. Now I'm 72 and retired; my children all live in other states and countries. I still make my bread and butter. Those magazines, Gentle Spirit haven't been in print for a while. If you see them at the thrift store, grab them! You will love them!

Jackie Dickie- Yes, I am your age and froze meals in the 1970s, continuing into today at our farm. We are semi retired, still working and still putting foods by. Between the store shortages and rising food prices, we have done well to keep our freezers full of healthy, economical meals. ~ Diane

Good morning Tessies. I have to say I really enjoyed watching you prepare these freezer meals. My Food Saver saves me money and time. Did you mention these are also boil bags? If I make Swedish Meatballs, there is no mess. I can drop the bag in a large pot of boiling water. Convenient for my guys for their hot lunch at the main farm. They come in from logging or haying and lunch is a breeze. I may try that soon with Sloppy Joes and meatball subs. Foods keep a long time when vacuum sealed and you're right, they take up less room when stacked.
