It's easier to compare a recipe with a sheet of music. The music appears by playing it, so does the recipe, the dish, appear by cooking it. You will definitley hear a difference between for instance the Berliner Philharmoniker playing Beethovens 9th Symphony compared with the London Symphony Orchestra, two professional Orchestras, playing the exact same piece, the same "recipe". And so you will hear a huge difference listening to an layman Orchestra playing the same piece, mostly sight reeding it, like a lot of "homecooks" do by cooking a dish step by step by following all the details and instructions of the recipe and nearly kill the spirit of the dish. I hope, you got my point 😅

You know flour can have different moisture, depends on the humidity, feeling the dough goes another level.

@@BenedictGS Depending on the weather (temperature / humidity) dough needs different amounts of waters, different resting times, every dough is like a baby/ child, with individual needs and results. If you mix different flours it becomes even more complicated, which makes baking not just a craft, but also an art form. :D

A recipe has no soul, but it _points_ to a soul, like a signpost or a statue. It's still up to you to embody the recipe and give it a living soul that will result in a dish that is nourishment for the spirit as well as the body.

The Star Wars movies i thought about was Epsiode 1 - 6 by George Lucas himself. Not this Disney crap. But ill accept youre answer, because there are so many Movies out there and for sure, there are can be some Movies that are better then Star Wars. Alex, beautiful video, spotless production, gorgeous editing and, above all, a gorgeous piece of wisdom to take home. Having said that, people come to share your journey, find solutions. The result, in this case, is as important as the journey. We want to know whether you found the true, ultimate meatball. You can't write your own music until you learn the basics of your instrument. Listen to and replicate songs you love until you understand them. Just as you can't cook without learning to appreciate the basics, the ingredients, and find your own passion. Try the same recipe 5 times, then find 20 other recipes for the same dish. Learn, compare and understand. That's what the people need you for. Inspiration, passion and guidance. very well done video Alex, but I am disappointed. I am missing that impartial video about the end result... seeing couple of batches of final, ultimate meatball, trying it with different sauces and side dishes... seeing you eat it... the most important bit... I get the message and sentiment behind this video, but it just left me with big hole inside :/

You mayhaps missed the point then. You are supposed to be the last missing piece... Get out there before they close down your favourite butcher shop(because who know what's gonna get closed soon), get the meat, ingredients and make a damn good batch of meatballs.

I agree. This is my favorite cooking channel by far but I thought this was a little too cinematic (sorry Alex). Beautifully shot, but I didn't feel any 'soul' from it. It was beautifully shot stock cooking footage, but I want something cinematic AND quirky/unique from such a quirky/unique person/chef. Just my two cents.

As an amateur home cook, what truly motivates me is the perfection made by those chefs in videos. However, by just watch first minute of this video I realized I should view recipes and the so called ‘perfection’ again. A recipe can get you started, but we are not workers on the streamline, we are cooks who incorporate our heart and soul inside our meal. Thanks Alex for your guidance. It truly gives me passion.

chrism95 I disagree. It was visually stunning but I feel like this was not the finale to the meatball series that me, or a lot of people were hoping for. This was a weird, 1 off, inspired/inspirational.... thing. It left a lot to be desired. Beautiful, but empty.

Hot damn, that was some amazing footage and editing! I've recently come to the same realization after a long conversation with a fantastic ramen cook from Japan. "The methods for making food is of the lowest priority," he said, "focus instead on mastering your intent as a cook and fully understanding ingredients in order to fulfill that intent." This series and that conversation has made me make the decision to revamp the type of content for my channel. Thank you very much.

With the thesis of this video, I am reminding of a review I saw on a Paula Deen recipe for English peas: "PAULA! I followed the recipee TO THE LETTER, but the can won't MELT! I have been simmering the recipee for SIX hours, adding butter repeatedly as needed, but the tin is resistent and wont MELT! Paula, can you please explain how the can should mellt? I have family attending a family gathering and this is a test run. Looking good, girl!"

As an avid meatball lover I have thoroughly loved watching this series, I even got an emotional meatball sized lump in my throat watching this homage to my favourite food. I only stumbled upon your channel while looking for the ultimate meatball blend. I've been making meatballs since I was a child, standing alongside my grandparents in their kitchen. Their recipe was much more basic than this, and the one I myself make these days. The 25 years since my first taste has just been a journey I'd live many lifetimes over. Thanks for creating this, I'll be giving your recipe a try in a few days.

What a let down... I had been looking forward to this video all night after I saw the premiere setup. This didn’t feel like any sort of finale of a series or even a regular video from Alex. While it was visually stunning, it was not what I come to this channel for. Not why I’ve become a Patreon. I’ll look forward to the Sauce series, and until then I’ll be here perfecting my own bowl of Raman.

That is also the way he ended the croissant series... I found it to be a nice ending. He didn't have more to add, putting this message in the last video wouldn't have been good for the message or the video.

lidular i understand your argument, but if there wasn’t more to add then it didn’t need a special finale episode. This could have very easily been a much better one off video than the ending of a series. That’s just my opinion, I’m probably wrong, and that’s okay. My comment was constructive and I’m still a huge fan. :)

Alex, being honest here.. the video that grabbed me and made me subscribe was the French omelette one.. I’ve watched every video since then.. all of them.. and I wait for them every Saturday .. compare this one the omelette video.. it’s night and day.. too much video graphic fluff.. I absolutely loved this video Alex. You expressed something I always felt but didn't know how to explain it. While I have used recipes many times, I never quite enjoyed cooking those dishes as much as I did when just doing what came naturally and spontaneously to me. Theres a certain excitement to preparing a dish from the heart. And I think you hit the nail on the head when you say "a recipe has no soul" Merci beaucoup Alex. And I look forward to a saucy new series 😁

Thanks, I hate premieres though. I know Alex is looking at these comments since he hearted the only one that was positive towards the premiere and also a channel with 1.69M subs. Premieres as a function aren't bad but the way it appears in the sub feed and essentially looks like a live video is terrible. KZbin's implementation of it is the issue. The sentiment around them I've seen is general dislike. People are always disappointed after clicking on it to find out that they have to wait a few hours or like this more than a day to see the video.

I think they're also suited to stuff like trailers or things which would benefit from the live chat feature. For this kind of content waiting to watch the video normally so it's in high Def as it's not streamed is almost always the better option

As someone who spends far too much time on KZbin, I agree. Unless it's something associated with a launch (e.g. a movie, game, etc.) it doesn't make much sense to me. Loved the video though.

Yeh I completely agree with you, for me it’s the issue of seeing a video uploaded earlier than usual! I click on it excited only to be pissed off that I have to wait a day or so..... doesn’t make any sense when the channel consistently uploads at the same time every week

He did. The fact that one doesnt exist was the point. _His_ perfect meatball was last episode. It might not be perfect for _you_ . Take what youve learned and forge your own perfect meatball. Hes given you a head start.

The lack of guidance was the point. Hes shown an arsenal of techniques and ingredient choices. Now go play with it yourself. Learn from his mistakes and your own. Take it a step further. Make _your_ perfect meatball.

Alex , you are great... and you have done something that many chefs fail to do, is show simplicity in the most difficult of culinary skills or in its preparations etc. you give people new to the culinary arts hope to be better then the best and you always show that if you at first not succeed try again until its achieved. The KZbin algorithm preferences channels that get views on their videos within 24 hrs of upload, so this helps with that as well.

@@LifebyMikeG Yes, there is plenty wrong. The way YT handles the premiere is the main issue. There is nowhere near enough differentiation from other videos, so you click expecting a video, not a static thumbnail and a chat box. If it was a "trailer" of sorts, previewing the content of the video and was marked adequately it would be a nice feature. But now it is just pure unadulterated disappointment.

Loved this episode, since I am a visual learner … when I want to learn a new recipe I watch ten or more people cooking the recipe from around the world, then I give it a try. The funny thing I have come to understand I often have a little guardian angel that whispers in my ear which ingredients I need to add to the food. Most of the time it is a sour, sweet or more added spices to amplify the seasoning. Trusting oneself is key in everything that we create.

Salut Alex! I know this might be sacrilege as you are French, but since us vegetarians had to sit through 2 months of meatballs, do you think we could maybe get some more vegetarian recipes in the future? I don't want to sound ungrateful because I absolutely loved this series haha. I hope you are also being safe surrounding this whole pandemic stuff, and you don't go crazy staying indoors so much. I also hope that you don't lose access to fresh ingredients because that might not be good. Anyways, I love your work and am amazed at how much you inspire me. Good luck with your next journey!

I had such a passion for cooking before having my first very serious flare-up of multiple sclerosis last year. I have spent today watching your various Journeys and they have truly touched me and made me want to try cooking again. I may still not be able to walk without wobbling or drive a car LOL but I will create in the kitchen again. This was a powerful and important message Alex. Thank you. Recipes are like grammar school. They are the beginning. They help teach techniques but are not the end. I have a rule for new foods. Do it by the recipe the first time, then tweak it. To other home cooks who've read this far and want to hone your craft, buy the book "The Flavor Bible". Its not a cook book. Its a cross reference chart for flavors. Sit down with it and an old recipe and youll see literally tens of ways to tweak it. Hundreds. Maybe even thousands.

This made me remember when I designed a cookie, just because I couldn't find a proper one around... Holy heaven... It took months... From reading as much as possible about each ingredient, trying butters and different sugars, to the oven temperature, time and how to incorporate the ingredients. Experimenting with food is fun and rewarding, but also very frustrating when things don't come out right. I studied civil engineering, so the typical approach... I love this channel, of course. I don't get the disdain for Premieres. They are just regular videos played at a scheduled time so that groups of people can watch together and live chat, including the creator. Some people like that. Nobody forces you to participate in the chat, and you can still watch it later if that's what you want. I would pay to eliminate worthless complaining comments.

Soo I usually watch videos at 1.25 because there is so much great content out there I want to get through more and it works for me I process information faster (sometimes) than the default speed.. but this was sooo good. It was worth taking the time to watch so I placed the speed back to normal and rewatched this. Respect. Very few videos get me to do this. I love KZbin feature of fast forwarding but you sir, this was creative. A master piece. Love it!

I wanted to go back to your videos and review them before I went and reevaluated my own "signature" mozzarella stuffed meat ball. I traditionally make it without a recipe save for a list of my spice mix using a blend of lean ground beef and ground sirloin a 3/4 inch cube of mozzarella in the center, bread crumbs, egg, then coated in my seasoned breadcrumbs before going for a spin in a skillet of oil... they are essentially lightly pan fried before being cooked through resulting in a meat ball that is tender, that oozes cheesy goodness as the fork splits into it. and it has always as they say "been a member of the clean plate club"... still I have had the urge to see if I could do better (without budget breaking meat mixtures you lucky ******* :) )... the speech you give here at the close of your meatball series is truly inspirational. never fails to get one choked up thinking of the passion you put into your own culinary adventures. Merci.

I loved the series, but I feel it left out the size. To me it is one of the most important parameters. If you boil or steam, they can be big - no problem. But if you fry them the surface is an important part of the taste. So.. in that case make them smaller. Case in point: Some of the fried Asian varieties of meatballs I've encountered are covered in a glace - if they were bigger that glace would taste a lot less. The same thing is true with Swedish meatballs, even if they are very mildly spiced.

Personally I didn't see the point of making this video. I get that it was mostly about delivering the message and the fancy effects, but honestly I found it tiring and I skipped to the end looking for actual cooking. Have to say, this new format is not really sticking to me. Good luck on your future ventures, have enjoyed the content so far.

I don't get this video. I get that the journey ended up being about more than meatballs, but not even a finished product? We learned the recipe for every meatball you visited but not your own? Then we just read it? Isn't that contradictory? Instead of hearing how you adapted and modified and evolved recipes to create yours, we get zero commentary on your final product. Hate to say it, but I didn't enjoy this video. Kind of a stain on the "series". Even the title wasn't relevant to the series but it was titled as a "Series Finale".

I agree, this along with the previous video just comes off as odd. I don't get the same kind of vibe, the video seems heavy on slow mow cinematic rather than factual testing and sort of scientific approach. Alex is a grown adult and can pursue whatever style he desires, its his channel after all but this seems like he has been under the influence of somebody else.

I get ya, almost vibes as if he had more fun editting this video than the journey. But I don't think the recipe video is needed like he says because it is so silly! I think it all jumped the shark last episode with the sudden switch to "good meat is good". Well duh! Lost the whole essence of the meatball in my opinion. But whatever, the three travel videos to start were great and took my meatball game to a new level (personally loving the shredded onion from the Turkish one and the soaking of the breadcrumbs seen in the 'watching YT' vid). I can buy cheap ass hamburger and make a better meatball now thanks to Alex. So there were still things to be had, but yeahhhhhh, I ain't gonna drop dough on something like aged meat and make a meatball out of it...

Dude. You are _the_ celebrity chef of your generation. Your attention to detail goes beyond what TV-production does. Your inability to compromise drives you to make content that is inspiring, informative and fun to watch. This format is key to show the potential of long-form content of seemingly simple concepts in cooking. People like Babish (though talented and appreciated) have nothing on the content you make. Take your time with the content but if you feel stuck for a long time don't chase perfection down an endless path that might make you give up instead of presenting something you feel is imperfect. Rather, take your own advice: play and don't worry too much about it. The best part of your videos aren't the topics they cover; it's seeing you approach those topics with curiosity and passion. That's what makes you inspiring. This was an absolute beast of a series, and I will definitely watch more if you make 'em.
