I just went to his bar after watching these videos. He's in Shinjuku, Tokyo. Drinks were incredible and catered toward your taste. We got 8 drinks which ended up being less than $160 USD. Chill dude and knows his shit! Go there if you are in Tokyo

Those are some rather serious, hate-filled, and frankly racist accusations there. Perhaps you should consider that, like literally everywhere else in the world, there are good people and bad people in Japan, and not make such sweepingly ignorant and bigoted statements. The man has style oozing out of every inch of his being, and his recipes look flat-out AAA. That said, he isn't flashy. He is fully competent in every basic aspect of bartending. It's the way he holds himself and his recipes that places him as a notch above.

That's a pretty common thing to do in bars. However most bartenders don't do it because it can be considered rude in front of customers

he probably stirred the drink first before the video started from the cut. japanese bartenders taste their drinks before shaking to make sure they don't have to remake the drink after shaking and pouring.

Most bartenders taste their drinks. The most common method uses a straw with a thumb over the end, 2nd comes a tiny cup. But I've seen a lot of Japanese bartenders do it this way. I'm not sure why, but it seems to be not uncommon.

FYI: cochineal is a crushed dried insect used to make a very bright red dye (doesn't last long, so it's usually just in cosmetics)
