Fresh spring rolls + 2 amazing dipping sauces

Fresh spring/summer rolls with a peanut dipping sauce & a sweet n sour style dipping sauce. These are a great summer dish, super fresh and tasty!
Ingredients I used for the rolls:
Chicken breast
1/2 a block of Tofu
Rice paper sheets
1 nest of Vermicelli rice noodles (thin)
Cucumber, peppers, lettuce, carrot
Thai basil, coriander, mint
For the Tofu marinade:
1 tsp soy sauce
1 tsp siracha
1 tsp honey
1 tsp sesame oil
2 tbsp lime juice
For the Sweet n Sour style sauce:
1 tbsp sugar
2 tbsp soy sauce
2 tbsp rice wine vinegar
1 tsp crispy chilli oil
1 tsp sesame oil
1 small garlic clove
For the peanut dipping sauce:
1 tbsp runny peanut butter (I used manilife)
1 tbsp soy sauce
1 tbsp agave syrup
1 tsp siracha
1 tsp sesame oil
1 tbsp lime juice
