This comment is a bit late but just wanted to say this. I have always been impressed by Mike’s taste buds (and he does know his stuff). He can definitely taste ! 14:41 When he said the local lobster (known as rock lobster or pitik) tasted sweeter than the normal lobster , I was so glad he pointed that out, not many can tell the difference. He was able to point that out even with all the sauces . In terms of lobster, no matter how big or small, in terms of flavour, that rock lobster reigns supreme in terms of flavour. Other countries don’t have that kind of lobster and majority of the people (including Pinoys) do not know about it. In terms of price, it’s a tad bit on the more on the expensive side but when you buy it in Panay or Palawan, you can get those fresh at significantly lower prices . The problem is there isn’t enough to buy as normal consumers as they are almost always bought by resorts and restos in different parts of the country.

I've binge watched your vlogs so much that I've been to several countries with you, on a few very swanky flights, many nice hotels and countless restaurants all over the world and in the states both east and west and in between not to mention road trips. I live in Alaska but when I go back home to Hawaii, I will definitely go to those places you visited. Kalua pig is a fave. Will make a drive up to the north shore for some shrimp. it’s more an aroma than a flavor: earthy (like dirt), musky, wood. the flavor is somewhat like mild shallot, but when used as ingredient it greatly enhances flavor of the food. they look like what a truffle chocolate looks like.
