Fried Baigan || Sautéed Eggplant

Fried Baigan or sautéed eggplant is a simple but tasty way to make eggplant. Eggplant is also called balajay or boulanger in Guyana. And this dish is often referred to as fry balanjay or boulanger.

Consider putting the eggplant after initially cut up on paper towel, lightly salted and cover with another paper towel w/something with weight for 20 minutes. This draws out some moisture and almost all the bitterness. Great video. Love this channel.

salt eggplant strips and lay flat on paper towel, let stand 10 mins to extract water so as to not steam cook as much as she did and can actually "fry"
