Oh Lordy, Jackie I really like your style of southern cooking. I'm a native Floridian. That looks delicious! I bet you can really cook up a pot of mustards or also turnip greens, & I like to mix green, especially turnip & mustards. Collards a treat, too. Imo, collards & rutabaga greens tastes similar. I want to try different greens to wrap & cook dolmades, which are seasoned rice, vinegar, seasonings, with mint, onions & garlic, etc, wrapped in greens leaves, cooked in herbed tomato sauce. I enjoy them.

Oh wow. I prepare my greens by separating each leaf, looking at it, destem it, stack them on top, then roll , then slice. Wash just how u do. I have to check out the leaves first. Tfs

after we picked and cleaned our greens, granny always told us to double wash. but i think she quadruple washed em. With turnips/mustards we would give em an xtra bath though😄

Love your recipe. I’d like to pass on a little hack to help keep your cutting board/mat from sliding around. Put a moistened and squeezed wash cloth under the mat and that will keep it from moving as you cut/chop. Happy New Year !

I tried this using the salted pork. It came put good. I fried it first. Emptied off the and used that grease to start sautéing the onions and greens

I have a question. Do you add the baking soda every time you add the new water? Or do you just use it the first time you’re washing them?

No just with the first wash. Let it sit for about 10 minutes with very hot water then wash normally. The second and third wash don’t get baking soda.

I add a few ladles at a time as the greens cook. As the broth cooks off add more until your greens are cooked to the tenderness that you like👍🏼

I’d use some kind of smoked turkey before I’d use beef bacon just because there’s nothing much to beef bacon. You can also use chicken or vegetable broth.

Ahhh-Ahh! NO! I learned the hard way that you need to take apart them greens, rinse each leaf off on both sides, & Clean them before you commence to choppin’ em up! I made the mistake of choppin’ em up 1st, THEN put them in the washing bowl in the sink. What I found was a disgusting grasshopper, & some small maggots chopped up all over my beautiful cut greens🤢🤮I’m sorry, ain’t No amount of water, can clean that off of my greens, period! Even though I know I could clean them all off, But I cannot unsee those chopped up gross Asf maggots, eatin’ & shyttin’ all over my supper!! Nope. I threw thst entire bunch in the trash, went back to store, & Bought more, & cleaned & cook the best greens I ever ate!! Wash them ALWAYS before you cut anything!!

I love the stems too but my family doesn’t so I don’t put a lot of them in mine. I also think that not only do they taste good but they make the dish look prettier.
