I've found a nice shortcut is to buy a pack or string cheese. Saves on some cutting and lets you choose to make em whole or cut em in half. But that's just my twist on making it just a tad easier. Thanks Shan and Kent!

For spicy, I don't add red pepper flakes, but what I do is add a bit of hot sauce to the egg wash.

this was one of the first things i messed around with when i started cooking years ago and this recipe is spot on. follow ken't instructions and freeze that cheese, because just slightly cold cheese will give you exploded lumps of cheese and bread crumbs floating around in your fryer, like i did a few times. lol.

I used to get them at the supermarket. I know a pizza place that gets the best cheese. They also get the best, big cans of artichokes, roasted red peppers and black olives. I remember my first attempt about 30 years ago. I had diet cheese sticks. I didn't freeze the cheese, so they came out nice and rectangular without any cheese! So my next attempt I did freeze them and then success. My son liked them better when they had cheese in them.

Thanks for sharing another winner - hard to beat a nice deep fired mozz stick. We just did some Friday, and to make best use of the oil, also did a batch of chicken nuggets and some breaded shrimp. An assortment of dipping sauces went along with the fried munchies. A quick and easy treat.

37 years ago today, I was in my second day of Air Force basic training. Previous to going to San Antonio I had worked at a company in Mattoon, IL named Diamond E Packers, onion ring factory, and one of the items they produced was string Mozzarella breaded cheese sticks for deep frying. Of the few favorite times to work there during those four months was when they were bring in the cheeses from Wisconsin. The three were cheddar, pepper jack, and string mozzarella. There was always a box or three open to grab a few pieces from before the line was switched from onion rings to cheese or other items. Batter tank drizzle, fine white breading, batter tank drizzle, coarse white breading with or without Italian seasoning. The sold to food distributors for restaurants, and also Banquet Foods. Those four months were a lot of 50 pound bags of onions, bags of breading, boxing onion pieces not suitable for making rings, overtime floorstack loading reefer trailers. The Air Force choice was always the better answer when I went to work there, and they knew it even though I was 18 years old. Ken, always enjoy your cooking and humor! The best mozzarella cheese we've bought is the one from Costco. You get so much for only about $7 and you can slice them in disks (because it comes in a roll).

@@kirkanos3968 - Actually, yes it is. It turns out that string cheese is made using a totally 100% natural process. String cheese needs only one ingredient: 100% mozzarella cheese. String cheese today is made simply by heating fresh mozzarella to 140 degrees Fahrenheit, a temperature just hot enough to realign the milk proteins naturally found in cheese.
