Best, by far, fried oysters I've eaten! Thank you so much for sharing this recipe. Except, I did not have bread flour so I used all purpose Einkorn flour and fried in avocado oil but they came out so crispy and delicate. I guess the secrete was the baking powder! Great tip!

I followed this recipe last year (taste tested a few to find the best and this is exactly like the fried oysters I would find in New England) Had to rewatch and write notes for this year (my recurring mistake was to take basket out and load oysters...DOH! So glad you mention to leave it in the hot oil and plunk the oysters in so they don't stick!!)...still the best fried oyster recipe out there and so easy! Thank YOU!!!

When I fry oysters I put them on a bath towel as soon as they come out I take and put the oysters in the towel and press down on the towel. I probably get a couple tablespoons of oil off the oysters. Now no big deal you eat oysters six times a year but I eat them 3 to 4 nights a week. It's more trouble and most people won't do this method. I do the same with fried soft crab. Because I live on the water and all I eat is seafood. Sometimes I put them in a toaster oven. You can even put them in the towel and put weight on the towels. I want the grease off the oysters.

i must have used a whole roll of paper towels to take off the grease lol. taking off the moisture before frying is important too. your batter, if any is better after frying. oh and watch ur cholesterol buddy. its so delicious but deadly too :)

thebigeasychef the thing is if you put shit in the oven you can just set the timer and go do shit and if you put stuff in a pot you can put it on simmer. My mother fried fish and muskrat the other day and it took 45 minutes to clean up.Grease was all over the place.

Hi Preston, great question, I seasoned the oysters before adding any flour to the oysters, I just forgot to show it or mention it in the video, (I guess it is a case of old age). I think it is better to add the seasoning directly to the oysters for better flavor, I added salt and black ground pepper, you can add any other seasoning you may like. Hi Rozozzy, To answer your question, I don't use the egg yolk, as I think just using the egg white make the breading more crispy. Think about it, when you fry egg the white gets nice and fluffy, and the yolk not so much. There is nothing wrong with using the whole egg, either way you are going to have some great oysters. I love oysters!! I usually fry them with a whole beaten egg, but I'm going to try the egg white mixture tonight instead. Great demo. Also, what did you season them with? I've tried the chesapeake seasoning, but usually opt for salt and pepper instead. Do you have any more suggestions such as a mix to make?

Hi Kelli, good luck with the egg white, I think this is the best way to make them, if they don't turn out dark enough for you, try adding a couple of egg yolks, this will make them a darker brown, and still keep them from soaking up to much oil. I like to use just salt and pepper, then I dip them in tartar sauce (I have a recipe for some really great tartar sauce here is the link, kzbin.info/www/bejne/l3O6dWNmepp_hdU), with a little lemon and hot sauce on them. Hi Ruby, you can add seasoning to the flour or you could use bread crumbs in place of the flour, or cracker crumbs, or even panko bread crumbs, also you could use cron flour, just be sure to coat them with flour, then in the egg, and use the breading of your choice. Hey BigEasy, you know I will comment, you could have used a tad more oil in your fryer so the whole oyster would have been submerged. Fried oysters are one my favorite seafood items, I usually just pan fry instead of my deep fryer bc of cleanup for oysters with flour. I soak my oysters in buttermilk, then flour, then dip into the buttermilk and flour again, then fry, makes an real crispy coating, that's almost the best part like fried chicken, gotta love the crispy crust. Imagine if I made a beer batter & dip the oysters in flour, then the beer batter, the deep fryer would be the perfect choice. Maybe you will do some seafood with a beer batter and your deep fryer. your friend, Casey

ruffrobb32 Hi Ruffrobb, Thank for noticing that I didn't season the oysters on camera, I did add salt and pepper to the oysters after draining them, just before they went into the flour the first time. Yes, oysters need some seasoning on them, salt and pepper at the least, and some times a shake of old bay seasoning adds a nice flavor. I've tried to get the super large Oysters in the shell but, they seem to be very seasonal. +william petillo Hi Bill, you are not a pest, I don't mind helping people with cooking. You could ask your fish monger, if they could get fresh oysters in a jar, these are the best for frying, maybe they could special order them for you. I am lucky as I live close enough the coast where there are oyster beds, so getting oysters has never been a problem for me. The only oysters I have seen in a can were very small, I think they would be best for oyster stew, and not frying. You could also ask your fish monger why the oysters in the shell are not available all of the time. I think the large fresh oysters in hte shell are best barbeuced. Hi Ann, thank you for you question, butter fried oysters are pretty close to the oysters I fried, the difference is that you would use clarified butter to fry the oysters fried at a lower temperature, and coated in bread crumbs. Hi Money, I seasoned the oysters before adding any flour to the oysters, I just forgot to show it or mention it in the video, (I guess it is a case of old age), you can season the oysters with just salt and pepper, or any type of pre-made seasoning that you prefer. Amen!! So many over cook oysters! And I would add you didn't add corn meal...corn meal is for cat fish not oysters!!! Forgive me for sounding like a religious zealot but I am from Savanah Ga where we take oysters seriously! LOL! I live in NY (upstate) where it is hard to buy fresh oysters. Do you know of a supplier that ships? I know this is an old video but in my opinion the best tutorial for fried oysters on youtube!

Hi Madam Vonkook, thanks for your comment, and I have to agree with you, I hate rubber oysters, and the same goes for scallops. You are very correct corn meal is good, but on fish not oysters. Hi nw5052001, if I am understand you correct you need to flour the oysters before the egg dip, as this allows the egg to stick to the oysters, and dip in flour again. If you fry the oysters a little longer they will become extra crispy, be careful to not overcook the oysters, or they will be tough and chewy. Thanks for your question, and for watching. The BEC

Ok,I just made these n they were good! But for me I am not a fan of egg whites n should have gone with my gut and used the whole egg for the wash! So wen I bit into one,it was hard to get beyond the egg white consistency thing for me....ugh But ty for sharing the recipe,it’s my hang up,not urs :) Just wanted to shout out to the other non egg white lovers cuz this prolly won’t work for you :) Will be trying this again,but for now sipping on some bourbon to cleanse my pallet ✌🏼

ok you got me sir. I meant no disrespect but Lard is a light flavored grease that works well with all types of fish including Oysters. I just can see spending 20 bucks for a premium oil that I am going to use once and throw away. Sometimes the old ways are the best ways.

+schlaznger Hi Schlaznger, I understand what you are saying, and just food for thought, where I live I can get a gallon of canola oil at Costco for around 8 dollars, and then it can be filtered and used again, but you are correct about how well lard works for frying fish, and other foods, it is good for sure. I think it would have been more helpful if you had started with shelling the oysters and it seems you then put them in a glass jar until the flour and egg were prepped. Why? Why not just a bowl or leave them in the sieve? But a thumbs up. Thank you for the video. I wish I could get oysters where I live, but sadly, can not.

Hi Species, thank you for your question, I bought the oysters already shucked, and they come that way in the jar. I like to leave them in there juice, it helps make the flour stick better to the oyster, also the juice adds flavor. If you look online there are places that will ship them fresh, they cost a lot, but for a true oyster lover they are well worth the money. Thanks for your comment and for watching, be safe out there. The best fried oysters require no seasoning as you want the flavor of the oyster to come through without being covered up with different spices.

I like this recipe it’s really good but you could do with half as many ingredients. Unless you’re a fn Restaurant. If you’re just trying to cook a couple dozen oysters or a couple jars of oysters just use half. 2 cups of flour is more then enough and it doesn’t have to be bread flour either! I would recommend wheat flour gut that’s all a preference. Other than that that just use the whole egg egg and the whites, please don’t waste, it’s not necessary trust me I’ve been using this recipe for over a year now, in all different forms of it, nobody is ever going to sit there and be like oh MG you didn’t separate the whites from the eggs! These are not cooked correctly, because you used eggs and not only the egg whites! Unless you’re Gordon FN Ramsey, know one Will everI know or think any different Except that half a dozen eggs didn’t go down the sink to make this recipe!!!

I like just the egg whites as they make the oysters nice and crispy, and The yolks don't go to waste, they are used in other recipes, or fed to my dog. Hi Chocolate, I have had other comments dealing with the spices or lack of spices, I did add salt and pepper before I put the oysters in any flour, I had forgot to video this step, and even worse I didn't mention it in the video, I know I am bad. You can add any spices that you feel would make the oyster taste even better, you could add "Old Bay", onion powder, garlic powder, etc. I love oysters after they are fried with some lemon, and Crystal Hot Sauce, but everyone to their own taste. These are the only simplest way of making the oysters to deep frying. But if you would like to add your own seasoning that would give your taste satisfying just go on right? This is what I am going to do now add a spicy things..and mmmmmmm..... so lovely taste yummmmy!!!! Thanks to you chef you gave me an idea how to cook the best for oysters love it!,,

I deep fry my oysters and when I take them out I immediately dip them in water for about a second to get the excess grease off ,but you can't do it if you put batter on them. So no batter on oysters but you get used to it. You got to use hotter oil, but do try no batter and dipping them in water for about a second.
