They don’t have to but in the very beginning of the season, they weren’t supposed to all be together for Thanksgiving but then they got locked out of Monica’s apartment so the original plan was ruined and they all spent Thanksgiving there and that’s when they made the tradition of all the holidays being at Monica’s apartment.
