I dont think the water really helps with unloading, it seems to just make mud and clump everything together.

I think so too. Either suspend the sand in water like in a pumping barge or leave the water out completely. That guy on the right is painful to watch. He thinks the water helps but it makes everything worse. Best to keep all the sand dry and flowing naturally.
