Kanda bhajji / Onion fritters

Ingredient list
Onion......................................4 medium
Coriander leaves.................handful
Green chilli............................1 medium
Fine gram flour......................1 cup
Rice flour................................2 tbsp
Baking soda..........................a pinch
Turmeric powder...................1/4 tsp
Coriander powder..................1/2 tsp
Red chilli powder...................1 tsp
Asafoetida ( hing).................1/8 tsp
Carom seeds (ajwain)..........1 tsp
OIl for deep frying
salt to taste
Tips
1) Use fine variety gram flour (besan) to make bhajjis crispy.
2) Use just a pinch of soda, too much soda will soak oil while frying
bhajji. 1 tbsp Cornflour can be replaced with soda.
3) The batter should be as thick as possible. Too much moist batter
will make soft bhajjis. Don't leave the batter for too long once it is
mixed, because onions will further release more water. So mix
small batches of mixture and quickly fry them.
4) Fry bhajjis in medium hot oil. If oil is not hot enough, bhajjis will
soak too much oil. If oil is very hot, bhajjis will become brown
from outside and will be raw from inside.
