In this video, we're revisiting the classic pasta shape from the Amalfi Coast of Italy - Gli Scialatielli, pronounced "Shah-lah-tee-eh-lee,". Because of its chubby appearance, many friends call it Italian udon noodles, chubby noodles, or Amalfi chubby noodles. It has many names, but what remains unchanged is how incredibly delicious it is!
Following instructions in this video, you too can effortlessly create toothsome, chewy handmade Italian Scialatielli pasta. Whether paired with a seafood mix for "Scialatielli ai Frutti di Mare" or a shoe-maker style tomato sauce for "Scialatielli alla Scarpariello," I guarantee they'll be so delicious you'll be tempted to lick the plate clean!
【Scialatielli Amalfi Chubby Noodles - Serves about 4】
- All-purpose or medium flour: 200g
- Fine durum wheat flour: 200g
- Full-fat milk: about 150ml
- Egg: 1
- Salt: 1/2 teaspoon
- Black pepper: to taste
- Olive oil: 1 tablespoon
- Fresh basil leaves: a small handful
- Parmesan cheese: about 20g
