The classic, final, flourish for some paellas, is to light a sprig of rosemary on fire, blow it out and quickly tuck it under the lid.

That this looks good and for me is perfect, cause I don't eat seafood. BUT PLEASE, it's not PALLELLA, it's PAELLA (pa eh lla / pai ay uh). You are adding an extra "lle" and it does sound awful.
