Love the tip to use the whites for coating the chicken rather than the whole egg. It makes it crispy and sometimes we don't know what to do with the whites if we used yolks in another recipe. You can even freeze the white in ice cube trays or something similar to get portions if you need them later on.

What do you notice the difference to be when carbonated water is used instead of normal water? 普通の水の代わりに炭酸水を使った場合の違いは何ですか?

Carbonated water is mildly acidic. The acidity tenderizes the meat (denatures the protein). It's why marinades usually include an acidic component (ie buttermilk fried chicken). He likely chooses straight carbonated water because he doesn't want to add additional flavors (ie vinegar or lemon juice)
