Hello Emmy and Paul. I really enjoy your channel. Your baking reminds me of my mom, who always had a delicious treat in the oven. Keep up the cooking videos! I just made a couple banana breads (had to use up some over-ripe bananas). My wife and daughter kept asking, "When can we cut one." I bartered and had them make a pot of tea and we all enjoyed the tea and bread. I have a question. How do you keep your bulk yeast fresh? Every time I buy larger quantities of yeast it goes bad before I can use it all.

I am going to try this! I really like that you tweak these recipes and add less sugar. I don't use sugar at all so I swap out sugar with monk fruit. It tends to be a little sweeter than sugar so I will definitely add less of that as well.

I have a wartime edition of this cookbook. It’s dedicated to General Douglas MacArthur and has about 70 pages of wartime cooking added to the back. Otherwise it is the same as yours. I really like the old Culinary Arts Institute recipes. Many do need additional seasoning to suit modern tastes, but they are an excellent place to start. Their breads are especially good.

I enjoy your videos so much! I especially enjoyed this one when you said you prayed for your viewers every night. We (my family) could benefit from your prayers right now. We have had tragedy and loss recently and it’s difficult. My uncle passed away yesterday from lung cancer and my cousin passed in a car accident 8 months ago. Also, my other cousin committed suicide some years ago. When I was visiting there house it really smacked me in the face when I saw a family picture and realized of the 5 of them only 2 are still living!! Covid alone makes things difficult but all the loss and death seems almost unbearable. Thanks for your prayers! Also, thanks for your light hearted and enjoyable videos! Tomorrow is my dad’s birthday...he passed 2 years ago! I miss him so much and every day! Even with it all there’s so much to be thankful for!!

I don’t care for honey, but think brown sugar would be a good substitute. From your experience, I’d put it in a larger pan on a cookie sheet to bake. Was the lower amount of salt you used adequate for the taste?

Frugal Money Saver Glad to hear the salt was right. I only have salted butter and may be a while before I can get unsalted. I received a Better Homes and Gardens Checkerboard cookbook when I got married 50 years ago. Made lots of good recipes, but the family favorite was blueberry muffins. 30 years passed and I bought a replacement cookbook. The muffins were blah. I found a note in front of the book saying they had cut the salt to 1/4 or 1/2 in all the recipes. I upped it to where it had been and the muffins were perfect again. I plan to start making my own bread again if the shortage outlasts my current supply. One of my daughters and my daughter-in-law both needed flour when I asked if they needed anything. They both also asked for canned tomato products. My daughter asked for cheese and my DIL for paper products and pasta. My other daughter also asked for cheese when she runs out-her family is vegetarian. I still need to finish organizing and inventorying my pantry. We gave our neighbor two packs of TP for their family of 3. He gave us a big box of small red potatoes we are sharing. Lots of potato salad in our future.
