Last fall I was given a couple 6 gallon carboys with some other brew stuff and had no idea what to do with it all. I stumbled upon your videos a few months back and you convinced me that I needed mead in my life. My friends and I have recently finished our first batch of orange blossom mead and it's delicious. Right now we have a 3 more batches in various phases. Keep up the good work.

I know this video is old, but you get a more prominent flavor by adding fruit to secondary. Adding to primary gives muted notes of whatever fruits/herbs/spices that you add.

Freeze the fruit first! Freezing Breaks down the membranes that hold the juice. Otherwise they won’t completely let their juice out in the mead. Or you could steep them for a while but don’t just throw them in there lol

Guys the orange peels contain heaps of esters that turn into methanol during fermentation. Check this for methanol at the end and if you use citris again then remove the peels and all the white stuff.

Take a passion fruit, cut it in half, add a pinch of salt, mix with a teaspoon inside the shell, then drink it without chewing. That's what I did quite a bit as a kid.

Is there a reason you don't leave the airlock on for secondary ferment? I've been making mead for years and have never had fermentation done after 30 days. Especially when you add fruit after primary, the added sugars give the yeast a boost and more stuff to eat. Love the videos, keep them coming!

I just bottled my first batch of mead on saturday, my second batch I'm thinking I'll bottle tomorrow. The home brew store I go to now has yeast specifically grown for brewing mead so my second batch might come out at 20%.

Your 5 gallon carboy should take 6 to 8 weeks, sometimes longer. If it still bubbling, then it is still fermenting. You can't force it just because you think it is taking too long. That being said...I think it is awesome that you guys are doing all the experimentation. These videos are fun to watch.

Since you capped off the one gallon carbons without air locks after adding fruit, I’m assuming you added potassium sorbate so as not to restart fermentation?

If you boil the fruit before you introduce them into the alcohol, it will bring out their natural sweetness. You may not even need to, because the mead does have its own sweetness.
