On April 11th, I will be going to Saint Thomas via Dallas and Miami.

Flight 163 was registration N792AN. It was delayed for an insane 2 hours and 40 minutes because of storm in Miami. The airport was closed, we sat on the ground.

Haha. Believe it or not, we went almost all the way to Oklahoma before we made our turn back to DFW. It was an extremely long approach.

Just under the outermost pylon would be Borrega Springs, so I would say the plane is probably near Laguna Mountain maybe? The big lake is Lake Ray Roberts.

I thought planes had to wait something like two minutes from the last takeoff before taking off themselves...

Nope. It depends on a lot of factors including what type of airspace you're in, what aircraft takes off before you, the weather condition, etc. So, when in controlled airspace, where an air traffic controller is controlling everything from a tower, as long as there is good weather and they can see the aircraft taking off, then all that is required is "visual separation." That means, as long as the controller, can visually see the two aircraft, then they can send them as quickly as they want. This is how airports like DFW, that have a lot of fights, are able to send upwards of 80 aircraft off of one runway in a single hour. As soon as one starts their takeoff roll, the controller is already clearing the next aircraft to line up and wait. As soon as the first aircraft's wheels leave the ground, the controller is giving the next aircraft their takeoff clearance. And remember, that next aircraft has already lined up on the runway. So, they can move aircraft pretty fast at large airports.

The best seats on the A321neo are 32A and 32F. The windows are perfect for recording so that you don't need to be in a weird position to record, and you also get the best view of the wing

Yes they are. They now have faster internet on most of their aircraft and you can connect to the wifi for free with your own devices. A lot of the A321's still have them though.

I was just one of the first people on the plane. Plus, since I was sitting farther back, most of the passengers who boarded before me were sitting much closer to the front. American is the one airline I make sure to requalify for status on every year. So I have priority boarding with them.

That is the PTU or power transfer unit. All Airbus aircraft have the "barking" noise you heard there, but it's more pronounced on the A320 series. When the pilots start the first engine, the PTU is used to transfer hydraulic power across to both sides of the aircraft until he second engine is started. You'll often hear it kick in again after landing when the pilots shut off an engine to save fuel.
