Making masala paste :
1. Onion : 1 medium size
2. Ginger : 1 inch long
3. Garlic cloves : 25 nos
4. Green chilli : 7 to 8 nos
5. Water : 2 tbsp
Marinate the chicken :
6. Chicken : 750 gm
7. Curd : 2 tbsp
8. Add the above paste
9. Turmeric powder : 1/2 tsp
10. Cumin seed powder : 1 tsp
11. Red chilli powder : 1 tsp
12. kashmiri red chilli powder : 1 tsp
13. Shahi garam masala powder : 1/2 tsp
14. Black pepper powder : 1 tsp
15. Salt : 1 tsp
Take a kadai and add:
16. Mustard oil : 200 gm
17. Sliced onion : 3 nos
Fry onion till they turn golden brown, keep it separate, let it cool and then grind the fried onion. Now Add in same kadai:
18. Bay leaves : 3 nos
19. Black cardamom : 1 nos
20. Cinnamon : 2 pieces
21. Cardamom : 3 nos
22. Sugar : 1 tsp(caramelize)
Add chiken in kadai. Cook in low to medium flame.
23. Salt : According to taste, keeping in mind the amount of salt we used during marination.
Take bowl and add:
24. Water : 1 cup
25. Tea leaves : 1 tsp
Add onion paste in kadai. Make tea liquor up to 3/4 cup and add in kadai. It will bring a blackish colour in preparation.
