Even in each breed, some naturally just gait, some naturally trot, some naturally pace and some will naturally gait, pace and trot. Which gaits does your horse do naturally? Knowing this will help you to get his gaits and to train him to stay in the gait. Knowing how to help him gait will make it so much easier for him to learn what you want. They may be bred to gait, but that does not mean they will do it under saddle unless you show them what you want and let them know what you don't want.
