The guy with 3 eyes actually beat Wukong in the novel and sealed Wukong in a jar filled with fire for 50 days. During the extensive torture, Wukong unlocked red fiery eyes.

Erlang Shen had never defeated Wu Kong, and Wu Kong had never defeated ES (before WK becames VFB). The two were evenly matched. Wu Kong, drunk, entered the Eight Trigrams Furnace of the Supreme Elder Lord and stayed there for 49 days.

Erlang never beaten Wukong. The novel states that they both know the same number of spells (72 I think?), and Earling has a slight upper hand because he's the Chinese God of War, and his third eye "true sight" allows him to see through Wukong's trick (like when he turned into a fcking house). However, their fight was cut short by Daode Tianzun (prob the same f*cker that threw the golden hoop on us in the prologue)- leaving it inconclusive. Naturally, due to pride, Erlang claimed he 'bested' the monkey king because hey! he (technically) completed his mission and subdued Wukong. Wukong then gained the "fiery eyes golden pupils" (more or less what Erlang's 3rd eye can do), and later gained the title "Victorious Fighting Buddha" which put him back on the same level as Erlang
