Here is another popular Bengali Dessert recipe Aam Doi or Mango Yogurt. It is one of the delicious mango recipe for summer season. Maximum Bengali sweet shop make this yogurt recipe as summer special sweet recipe.
Ingredients:
Mango Pulp
Milk
Sugar
Plain Yogurt
Methods of how to make Aam Doi:
1. At first start boiling 500 ml Milk in a bowl on high flame.
2. When it starts boiling turn the flame to medium.
3. Stir continuously and boil till it reduces to 250 ml from 500 ml.
4. When it's almost reduced to half add 4 tbsp. Sugar (as per taste).
5. As the mango is also sweet so add the sugar as per taste.
6. Boil for another 2 mins so the sugar melts and turn off your oven.
7. Le the Milk cool down but not completely, it should be Lukewarm.
8. After the Milk (Lukewarm) cools down add Mango Pulp.
9. Blend 2 sliced Mangoes in a blender.
10. Add the Mango Pulp slowly and mix well.
11. Now add 50 gm homemade beaten Yogurt. Mix well with a whisk or a spoon.
12. Place a big towel folded in half and out a clay bowl on top.
13. Now add the Milk and Mango mixture in the bowl
14. Then cover with a plate and put the towel on top like this
15. Put a heavy weighted thing like stone or anything on top and keep it for 7-8 hours or overnight.
16. After 8 hours open it. Our Curd is ready, put it in fridge for 3-4 hours.
