Great recipe. Thanks for uploading. Since my mom is no more I get lot of traditional bengali recipes from bengali women on youtube. But the bitter gourd was still not cooked. I have to cook for 15 mins more to bring it soft. But it is worth extra minutes. Next time I will add eggplant way later. I didn't use any potatoes. Instead I used boiled potato with boiled bitter gourd Varta . With warm rice it really taste divine. Any idea why the Uchhe took longer for me to cook? Update: I found a way to minimize cooking time . I microwaved without water pieces of bitter gourd for 3 mins. It became soft. Then I went with normal process and walla. This time it tastes even better.
