Lovely! Thank you so much. I love smoked paprika, and I totally agree- nutrient rich soil is the key to delicious food and spices. I also love the idea of keeping them whole until you're ready to use them. Freshly ground spices taste infinitely better, and once you've used them fresh the idea of using stale spices just won't cut it.

Glad this video came along when it did. Paprika/chili powder is one of the things I am looking to up my game in this year. I normally grow poblanos, but I've added pasilla and mirasol peppers this year too. I'm looking for a more complex, mid-heat powder this year. I had planned on smoked and plain dried chiles, but I hadn't thought about the smoked onions and garlic to add in. I am nearly out of smoked onions from last year so I'm planning on doing more this summer, and I haven't smoked and dried garlic before, so I'm looking forward to that. Thanks for the ideas!

Oh wow! Okay this is interesting stuff for us! We are a semi-retired couple who bought a 62 acre island on a lake in the wilderness of Canada this past summer! We are already starting to build and we are planning a geothermal greenhouse as well! What a ride!!! 😊

This is the video i was waiting for all my life not even joking, i once ate a dish with the most amazing paprika powder, it was sweet and smokey and flavourful, i looked for it in every store i could and never succeeded but now with this video you bet im going to try this out with my corno rosso paprikas this year :):) Could you make more spice videos in the feauture? I have a lot of scrap cherry left over from making my art. I use that for smoking meats and cheese. I suspect that cherry wood would be amazing for this.

We grow Hungarian Hot Wax peppers as well as a few other types. I had no idea that this is how you get paprika or smoked paprika. Guess I will be letting a couple plants go full term and start making our own! Thanks for the video and information!

Hey Nate! I'm still going to grow potatoes but my long term goal is to grow peanuts as my staple crop. Much healthier (boiled) and the shells can be used as a replacement for coconut coir.

actually you can't get much healthier than potatoes my friend they are truly amazing especially when grown in nutrient rich soil bursting with life!!!... peanuts are also good but never could they replace potatoes IMHO

Extremely helpful video. Especially seeing the level of “done-ness” after smoking. I have also grown a couple hundred poblano, Hungarian hot wax and jalapeños to sell from my little greenhouse. Awesome video! Thanks. Is there a traditional smoke for smoked paprika? I know that chipotle is traditionally jalapenos under mesquite smoke. It's probably worth experimenting with both spices. FYI I did a batch of chipotle a few years back with legitimate hot jalapenos. The heat carries over and it's a few tsp to a batch of chili. Vent the room when you grind this stuff. :)

yes my friend I've done the homemade chipotle and its so blazing hot I can hardly use much!!!... I am not certain about the traditional smoke but I do know for me the best flavor by far is from oak wood smoke

Also, I never put much though into it, but I wonder where we draw our lines with paprika vs chipotle vs chili powder. We have expectations but I don't have any idea what peppers are in chili powder.

paprika is typically any of the Hungarian Wax pepper types that have gone fully ripe... chipotle is the smoked jalapeño pepper when its been allowed to age fully to red... chili powder can be so many things!

yes now is pretty much the ideal time no matter what zone you are in... our last frost date here is may 15 so I start mine about 6-8 weeks before that date

So the reds(cornado del toros?) weren’t smoked? Just the poblanos? Could I use bell peppers? I generally grow hotter peppers like jalapeños, for chipotle, but I want to try something different. I’m making hot sauce, but paprika sounds interesting. And store bought sucks. Or is too expensive(for me) for good quality.

any kind of pepper can be smoked and dried and it will be amazing... I like particular ones due to the thickness of the skin and subtle sweetness of the flesh.. the ones that made the best paprika were the Ajvarski peppers from baker creek seeds... amazing!!

I started my gardening life at 8yrs old laying between rows of tomatoes and eating figs from the trees on the northern side of a 1/4 acre wedgie patch in central New South Wales in Australia, way back in 1960. Now at 70 after a bad accident in 2005, I am restricted to planting the tops of every pineapple we eat all homegrown and lemons from 3 trees. Surprised to see the pablano scored so high, I'll have to give them a try. I was surprised that smoking the peppers could be achieved so easily. I always thought it'd be harder.

its so easy but the key is to use big chunks of wood not the little wood chips... and oak is the most intense flavor of smoke IME

I’ve made smoked paprika for years. Love it! My main variety is Ferenc Tender. My technique is the same, smoke for a few hours then dehydrate to a crisp. If you grind a bunch it will keep its flavor in the freezer. That way you don’t have to grind so often.

Hi really like your channel and you do all organic but I have question for you? Why did you use chemical briquettes instead of charcoal in a barbecue and you put garlic on aluminum foil instead on metal tray. We all know how aluminum is so bad specially garlic in that stage.

from my experiance for mild or hot by far tastiest pepper for drying are the Reza macedonian peppers

you can get little packets from amazon that will absorb oxygen. pop a few in a jar seal it and they prevent oxidation. It's easier than back filling with nitrogen.

That looks fantastic! I am definitely going to smoke some peppers at the end of summer and try my hand at making homemade smoked paprika. Thanks so much for teaching us your method. And I also have the Cosori dehydrator and LOVE IT. I actually have two of them and they work beautifully. Like you said, for the price they really can't be beat.

I dried and powdered Alma Paprika pepper last year, so good! The pepper has a very ripe sweetness, with a moderate even burn. The flavor profile un-smoked is devine. I will try smoking some this year.

I string them up with a needle and thread and hang to dry from raw. Definitely going to try cooking them first this year. Yum!

I grow the Alma Paprika. You are absolutely right. Nothing in the store have I found that can touch the smell or taste of homemade smoked peppers. You are very Knowledgeable on many subjects. Keep the positive energy flowing.
