I have my grandmother's cast iron cornbread pan ("corn cob" shaped places you pour the batter) that is +100 yrs old--a treasure! I am from Texas (not sure if different methods in different areas) --I use baking powder instead of baking soda and mix part flour and part cornmeal. Also, preheat the oil in the pan then pour the batter onto it instead of pouring the hot oil back into the batter--gives a nice crispy crusty crust🤤
