Gas Flush Vacuum Packing, Sammic SV-310S Modified Atmospher in a Commercial Chamber Machine

Yes the nitrogen does have food preserving qualities. Have you ever bought a bag of salad from the local store. Opened it up and with in 24 hours it is brown? That is caused by the nitrogen being released on somewhat old salad and the oxygen rapidly deteriorates the salad. But fresh salad slowly deteriorates until it is the same age as that in the bag. Yes nitrogen flush protects against crushing the product in the bag. Potato chip bags are all nitrogen flush. If one steps on the chips they will still break but with careful handling they can stay unbroken.

Go to Praxair or Amerigas in your area. Either company will be able to get you set up with a regulator and tank and the correct gas type for your Sammic.

Hi what type of gas would you recommend for vacuuming and freezing pizza? Don't want it to crush my crust in the vacuum process but also need to protect against freezer burn.

Hello Pete Nitrogen is the go to gas for most foods. But the experts at Praxair or Amerigas can help you with any food preservations using gas. Using gas flush will protect against freezer burn and keep the product from being crushed under the atmospheric pressure.
