Well, why e and not other base number? Also why not a triangular shape instead of negative exponential?

The number e in exponential functions has some desired properties when working with it in maths, namely that the derivative and the integral of the function are equal to the function. Regarding, "why not a triangular shape instead", I guess that you refer to how the gaussian distribution looks like. Well, having a triangular shape with corners may be a bad idea since you can't compute the derivative there, making the function harder to analyse and work with.
