I had to smile, this is an old recipe from my childhood. I have my mums bell cream maker, that really worked using the same recipe. Recipe was also in the Kenwood liquidizer (blender) recipe book. This is very handy to have.

This is 50% butterfat whipped cream. That is extremely high. In the US, it’s usually 33%. Can the butter volume be reduced and still produce good results?

Thanks for the recipe. I like this because you can use a flavorful cultured butter and end up with some tasty cream. I can find heavy cream where I live but the quality is kinda hit or miss. This recipe yields cream at approximately 42% fat content (assuming 3.4% fat milk and 82% fat butter), which is a bit fattier than the usual 35%. Adding a small amount of whey protein (unflavored) may enhance the emulsifying capacity of the mixture and shorten the required blending time, as I'm guessing 4 minutes at max speed on a Vitamix gets it to boiling temp.

Gemma, this is the best Christmas present you could have given me. I buy heavy cream only rarely because real heavy cream without additives is very pricey. This also let's you avoid whipping cream with additives. All whipping cream in the US now contains carrageenan which some people are allergic to. Also, medical research just came out linking carrageenan to inflammation in the gut, inflammation in the hypothalamus, and insulin resistance.

I bet this recipe is transferred from metric units, cause it's like 150 g of butter and 150ml of whole milk >< which means you can easily scale it up or down however you want, you just use some number of grams of butter, and equal number of ml of milk

Hi. Five minutes seems like a long time to blend, but it will ensure that the milk and butter stay emulsified as the mixture cools. If they separate, you won’t be able to whip it up. Hope this helps.

I got tired of not being able to find 100% whipping cream without carragenan, locust gum, or other emusifiers, so I found a faster way to make heavy whipping cream with no additives, no butter, heating, high-speed blender, or cool-down time necessary--reconstitute mascarpone cheese. It's 100% cream that's been reduced. I can get it in an 8oz container for $3.68. For each 8oz of mascarpone, add 5 to 6 tablespoons of water. Mix it gently in a bowl, pushing the water into the mascarpone. Don't stir or whisk, or you'll incorporate too much air and end up with something closer to whipped cream. In a short while, you'll have a pourable heavy cream to use in desserts, pies, casseroles, and so on. One 8oz container of mascarpone and 5 to 6 tablespoons of water will yield about 1.5 cups of heavy cream. Once the water is incorporated, you can whip this easily, and it makes beautiful whipped cream. I've used the reconstituted heavy cream in broccoli cheese casserole and the whipped cream to top pies. I hope it works as well for you as it does for me.

@@biggerbolderbaking True, but it's also a quicker option if someone is in a hurry and needs heavy cream they need to use now. The other thing about the mascarpone method is that it provides an excellent stabilized whipped cream. I only recently discovered that's because people have added mascarpone to their whipped cream as a stabilizer, so there are fewer worries about weeping and deflation. It's good to have options and both methods depending on the circumstances.

All butter is high fat. Butter is only milk fat and water. If you take heavy cream and a blender, you will get butter and butter milk, when it separates. European butter typically has maximum 16% water. American has between 16%-20% water.

No, unfortunately. This recipe requires dairy. Whole milk is essential in this recipe. You can not use low-fat or non-fat milk because it won’t whip up well. Hope this clarifies things.

You can get "whipped cream" also by mixing fat-free, shelf stable milk on high speed with an immersion blender. It doesn't taste as good, but the final product is somewhat comparable to whipped cream. I never tried this method with fresh fat-free milk, and it may work as well

Hi. This recipe needs whole milk / full fat milk. Fat-free milk won't whip as well or taste as good. Without the butter, cream made of milk entirely won't be stable on its own, at least not for long. Hope this helps.

@@biggerbolderbaking maybe I want't clear in my post, what I meant to say is that you can make whipped cream using shelf stable fat-free milk alone, just milk without adding butter. You will need an immersion blender that agitates the fat-free milk at high speed, and the resulting product is a very light whipped "cream" somehow akin to milkshake but more stable.

No, you just need to combine the milk and butter in a small saucepan over medium heat and warm, stirring constantly, just until the butter melts. Hope this helps.

Overwhipping will make it too thick and more like butter than whipped cream.

I did make butter also, I made mistake first batch used salted butter. When it turned to whip cream I just kept whipping. Got about 1/2 pound butter. No salt added .Buttermilk was very salty. Tossed it out.
