Do you think it’s possible to change the laser colour on these sort of projectors? They are green, which I personally hate! But love the idea of the stars if they could be white or blue…

I rekon it could be done. You would want to get a laser diode that is the same output power and may need to tweak the driver circuit to ensure it gets the right power level. This one is
