Since first starting my Authentic Viking Mead project, it has taken 113 days to get to this final stage.
Today I Taste Test my Aged Mature Mead and compare it to a new bottled Honey Mead.

Yep, and I continued to enjoy it after I finished recording the vid. Didn't enjoy it too much, had to edit the vid and upload to YT

Great video, sounds like it tastes very nice. I made a simple mead. I just used honey, water and rum yeast. Heated 4 litres of water to 30 degrees c, added about 1kg honey to fill the Demi jar to the 5 litre mark. Give a sake, add a sachet of rum yeast and put the bubble breather in the top. Left it 12 months in a dark cupboard. It’s crystal clear, around 12%abv, tastes a mild mellow sweet wine, sweet honey smell. I might distil the rest, and add it back in to strengthen it up. Just an idea. Thanks for another great video, from UK 🇬🇧

I'm at a guess thinking they back sweetened the commercial one with extra honey but over did it by a tad

Had ti taste test a ltr of the Mead last night and I also had that bottle of store bought Mead. In comparison, the Store bought was ghastly sweet and my mead had a distinct semi sweet maturity to it and much more palatable.

I'm wondering why is your mead cloudy. I made similar mead with plenty of different flower petals, a few raisins, a bit of rose hips and juniber berries and my mead is totally clear after maybe four rackings. I have no idea why is it so. Of course it is dark, but totally clear. It has been fermenting now about 60 days and still some activity in airlock. No chemicals used, only wild yeast etc.

I'm at 3:02 in and I'm guessing that your mead is going to be way better than commercial mead it has to be. Give you more feedback when I've finished, just by the by I'll be having a whole heap of Brewing videos on my channel very soon

Why don't you try distilation on the mead,at least half of your mead,just curious how it will taste at 40% alcohol

Hey Percy, I'm of the same mind and was going to distill it if it didn't taste ok. My wife loves it and it is now her Fav drink. Not sure how often I will make it at 113 days and $45 cost to make.

@@pauljacobs5390 The time is definitely a worry although it's mostly waiting right? I think you said there was 9 (10?) litre bottles for $45 is not bad as long as someone likes it. I just don't like sweet stuff at all. Interesting to learn a new process though. Did you tell her how much you made, it would be interesting to keep some aside to pot still just to see how it comes out, I haven't heard of anyone doing that.

I will do another run specifically to put through my little pot still. I found the challenge of doing it like the Vikings very interesting.

@@pauljacobs5390 Great I will be around cheering you on. Cheers. (BTW I am on an 8 day course of antibiotics where I am absolutely not allowed to touch alcohol - it's murder! LOL. I wouldn't wish it on my worst enemy. Oh! and I have just put down my first all-grain wash - and it's bubbling along nicely, I am so pleased with myself LOL).

Had a couple of beers before dinner, and after dinner poured myself a Mead for desert. The sugar works for me, my wife had Icecream and I had Mead.....
