I don't know if you're aware of what asmr is, but incase you don't, it's head tingles. It de-stresses me majorly and helps me sleep. Your videos where you're explaining things or telling stories cause these asmr effects massively. You've prevented many anxiety attacks . I just want to say a big thank you, Peter :) your videos have helped me more than you'll ever realise. My mental health doesn't handle stress very well at all. Your videos have calmed me down when nothing else could xo

I found this encouraging and a delight for two reasons. One that a man alone is able to provide healthy eating for himself and the second is that an older person is making an effort to live well. I admire your spirit.

I can see why your so remarkable at your seasoned age. No junk food and good home cooked meals. My Dad is ninety, lives on his own and also does his own cooking. That must be the secret to a long life. I love watching all your videos.

A very healthy meal Peter. I cook my beef in a bottle of red wine - no need for it to be expensive - a cheap fruity one is fine. Some fresh or dried herbs like rosemary and thyme is nice too along with ground black pepper. That's about it. No need to go too expensive.

Love Brisket! Not familiar with your British Vegetable that you added but would like to try if I knew what it was called here in U.S. I made my brisket on top of stove almost same way, Love it! I can actually chew it also (teeth issue) I'm almost 60! Thanks Peter!Take care.

In England UK the manufacturers mostly use Centigrade... So that would be Electric 150°C or Electric Fan Assisted 130°C or Electric 300°F or Gas Mark No 2. These temperatures are good for long slow cook meals - Example: start a casserole on the hot plate first to bring it up to boiling point, then remove from hotplate and finish at the above temperature for about 2 - 3 hours.

The vegetable that you refer to as a "Swede;" it looks like what we here in the US refer to as a rutabega. A medium red or purple skin with a golden colored center. Yummy! Very good in a roast or stew. I really enjoy your videos, sir!

I love the ever familiar phrase, "...but this is geriatric cooking, so..." as he wings his way through. :) I work as a chef and there are no guidelines, that's just the way you do it... if somebody tells you that something will take XX minutes to cook at XXXºC then they're lying, nothing is set in stone - sometimes you just have to feel your way through, and this is what makes cooking fun in my opinion. :)

TECHNICAL ADDITION: To Stateside KZbinrs: The Swede (also known as rutabaga or a Swedish turnip) is so called because the name comes from the Swedish "rotabagge." Peter, you are the only chef that can make the mouth water of a vegetarian! I will have to look up my mum's recipe which all our guests adored. Sadly, the only ingredient I remember is Sherry.

I love how you cut vegetables into huge chunks like that. My mother always feels it's imperative to chop them into tiny pieces, which really put me off cooking for a long time, because the work seems tedious and the effort not worth the gain. I think big pieces make so much more sense. It'll all end up in my stomach one way or the other, so why waste work and time on it?
