This Bisque recipe was virtually identical to pig bisque and in fact Escoffier simply refers to Bisque pork when talking about Bisque de Hormel (pork innards). So if you can get a hold of some pig, you can go to town with that as well!

As far as the ribs its nothing new, its just a big version of a santa maria grill where you simply wind the grate up away from the coals instead of moving the coals away from the flame or using a deflector plate for indirect heat

This most likely Austria and not Germany. Gösser beer is an Austrian beer. The Germans in bordering Bavaria do not serve Gösser beer. High five from an American in the capitol of Bavaria: Munich, Germany ( the beer capitol of the world & home of the original Oktoberfest)
