Great series! I'm going to have to try axis deer in HI one these days! I don't live where I grew up any more but still hunt the family farm on holiday visits. When freezing meat for transport back home, I leave most of the thicker silver skin on the outside of the meat. Especially if you are going to use vac bags, that silver skin is just more freezer burn protection if the vac bag punctures after you dig through the freezer a bunch. It also saves time on your trips by not having to trim everything. As you thaw the meat, you just trim before using, that way you only have to trim one piece at a time instead of the whole animal. I think the silver skin trims easier when the meat is partially thawed anyway. I do try to get as much fat off (when it's present) as it will spoil much sooner than the meat. Just my two cents.

Solid advice. We were jammed packed for weight and luggage so we opted to not ship the trim back, saved us a lot and our bags made the weight limit. Barely!

In a pot roast I would trim most of the bigger stuff but all that connective tissue will break down nicely in a 8-10 hour long roast. 👍🏾

Axis deer is amazing, very mild in flavor compared to other venisons.

For the football (that's what I call it) I trim it down a little bit more. It be begin to look more like a foot ball. Then freeZe that as a roast. And I would just cook it like that.

I'd just roast it, in a crock pot that finer silver skin melts away. You don't want tons of it, but if you can't trim it cuz it's so fine, just ignore it
