I think the reason why the ai is escaping your submissions is because they might be struggling and draining your stamina. It's hard to tell with no hud but your queue would be to pay attention to your opponent to see if they're moving a lot or if their face or your face starts to turn a bit red. Once your stamina hits zero you can't deny, and same goes for them. Best thing to do is to race the submission or transition when this happens. I'd suggest you use the struggle mechanic (R1) when you deny their transitions, and lock in the submission that way and race whenever you see them start to transition after a few denies. It becomes a mind game since you can transition fake or submission fake and if they bite on the fake they lose stamina giving you the advantage and vice versa. Stamina is key in submissions, hope this helps man!

Think you're probably right mate about the struggle mechanic. It's a mechanic I've been heavily neglecting due to having no hud in these career runs all the time, but you can still see the visual cue of them moving around, as you say. Also, because I'm not an online player, I'm out of the loop on certain metas, or terms of describing things. I've only just a few hours ago watched a video and it mentioned racing struggles and submissions, and I had no idea what it was at first 🤣 You mentioning it your message was the second time I'm hearing about it, so I'll have to look into this more and learn more about it, and practice it. My submission game is absolutely atrocious. Advice on how to kick someone in the head I got you. Your playthrough has help me get better at the ground game. By just seeing what your getting off successfully.

The Unranked fighters is in alphabetic order not how far they are
