one dry onion
two cloves of garlic
celery (optional)
100 ml. of olive oil
two vegetable cubes
some white wine
two bay leaves
250 gr. of tomato pulp
250 ml. of water
one big carrot
2-3 red bell peppers
500 gr. of boiled giant beans
some parsley
some dill
some oregano
one lemon

Put in the oven for at least 1,5 hour at 180 C (fan assisted).
Notes
The procedure to prepare the beans is specific. There are steps in this process and there are reasons why this is done. First, you have to soak the beans in a bowl of water (1 lt. of water) for at least 12 hours. Second, you have to throw away the water and rinse the beans. Third, you should boil the beans for at least one hour and again throw the water away and rinse the beans.
The reason why we let the beans to soak in the water is that they have to absorb the water they have lost during the drying procedure. Also, when we throw the water away and rinse the beans, we do this for a specific reason. The beans contain the so called phytic acid which reduces the absorption of zinc, iron, and calcium by the body. As a result, we cannot get these minerals from the food. The soaking and the washing of the beans removes part of the phytic acid so that the beans become more easily digestible by the body.
I use cast iron round casserole to bake the beans because this pan allows heat to be evenly distributed throughout the casserole. Cast iron retains heat efficiently, allowing you to use the gentlest cooking methods.
Please note that the quality of such a dish depends on the amount of herbs we add. I usually add fresh parsley, dill, and oregano. Also, please cut the bell peppers in quite large pieces because the carrots and the beans need quite a time to be baked. If the pieces are not big enough they will just melt in the food. Finally, the time you will need for the beans to be baked depends on the quality of the beans. Some beans need 1,5 hours to get done, some others even more, at least 2 hours.
