The spoon method of peeling is the greatest thing on the planet and literally makes the whole process take seconds. I would love to hear if you take the plunge to work with fresh ginger. Swimming room! Love it. Great tip on the ginger water. Husband in military so we lived in different countries allowing me to learn many ways of doing things separate from USA. Especially enjoyed this vid! Thank you. I grow ginger in pots and am always looking for new uses! Can hardly wait to try this out. Wonder if I didn’t want the finished product quite so runny and I removed some of the syrup, would it still gel? Experiments! Experiments!

If you use the powdered pectin it will gel. The jam sugar although it contains pectin doesn't have the same amount as we would use to make this the full way :) But sure let me know how your experiments go xox

It is good and has it's uses, the pectin level though is pretty low for ingredients that don't have natural pectin. It is handy though for berries and citrus fruits.

Yeah myself I cant afford to import a pressure canner its a weeks wages we cant afford to put out there. This method is accepted as just as safe so I'm cool with it xox Glad you enjoyed it its a really yummy marmalade :D

I would be very interested in what all you use ginger for. I grew some last year and have a bag of it in my freezer. I have gastroparesis and wonder if I could even put a spoon of this jam in my hot tea to both sweeten and help my stomach. I have IBS so ginger is a go to for me in lots of things. I found that using it in a similar way to how Asians use it has been awesome. So I use it alot in stir-fry's and I crystallise it as well. Tea is a favourite though and I will literally work at trying it every way I can :D I will make more ginger videos though very soon as it seems to be on offer at the moment and half the price it normally is.

I've never had any luck peeling ginger with a spoon...maybe mine are too dull? This recipe sounds soooo good! We love ginger!

It does use a lot of ginger but it’s easy enough to get at Asian grocery stores or even to grow :)
