Munggo stew also pairs really well with deep-fried fish and dipping sauces which are spicy soy sauce or fish sauce with lemon or calamansi. And oh! DO NOT FORGET THE RICE!

it has many variants.. and i love to cook 3 of them.. if i have alugbati as the leafy vegetables ,i used pork belly along with chicharon -pork variant if i have ampalaya leaf, i used shrimp or prawn or even prawn head if i can't afford to buy whole prawns.. i also put tinapa.. -seafood variant if i have malunggay, i cook my most favorite monggo variant .. i used buto-buto ng baka and i put coconut milk on this monggo variant... - beef variant

when i always cook munggo i used also the sauted shrimp paste or the sweet bagoong dipping sauce of green mango ... Sometimes instead of lechon kawali i used Pork Pata i boiled it in preassure cooker until soft and tender ...Super love the result ❤

In Philippines they cooked it differently in other places. So it's OK how you cooked it as long as monggo is the main ingredient. Love monggo❤️

Perfect it's Friday 👏 If you grew up with this dish, you might have noticed something about when this dish is served. I mean, why is Ginisang Munggo cooked on Fridays? Legend has it that this comes from the Lenten season tradition wherein Catholics abstain from meat on Fridays.

Ginisang Monggo is one of the dishes that the friars promoted especially in Fridays and Lenten season during the Spanish period in the Philippines, as you could cook it without meat and just use smoked fish (tinapa) or just only vegetables (you could make this as a vegan dish if you don't use fish sauce, bagoong or chicken powder)... Other option you could add is to add chicharon or pork rinds as toppings to it as it will dissolves on the dish and adds saltiness to it.. but if you want an exotic twist to your monggo, you may try to add chicken feet (that's my family's recipe adds) In terms of vegetables that you could add into it, we mostly add the fruit and leaves of ampalaya(bittermelon).. we sometimes add malunggay leaves, chili leaves, alukbti or talinum leaves(the last two are local vegetables here in the Philippines).. but spinach is a good substitute as they have the bitterness like the ampalaya leaves...

There is a hack of letting it soak first for an hour or two, it makes the monggo cook faster(less heat) and strain it when half cooked(to remove extra starch like rice) then you can cook it fully as usual.

you can also try mixing pork with prawns. then actually any of those leaves (malunggay, alugbati, bittergourd leaves and fruits, sweet potato leaf sprouts, and even squash flowers)

For aesthetic purposes, sometimes we remove monggo seeds skin by pre-boiling the seeds first then rubbing them manually with our hands then washing it with water to remove it.

Fun Fact: Pilipinoes generally eat gin isang mungo on Fridays. As Catholics, refraining from eating meat (As main dish) is practiced. It’s kind of abstinence from meat. Mercados (little markets) usually run out of monggo during fridays! ‘It’s true. Happy eating.
